my mom's favorite: grind up the beef, carrots, celery, cabbage, onions, garlic and potatoes. Pour some beef stock over the grindings in a big pan and simmer until veggies are tender. You can add other herbs to your liking like a bay leaf, salt, pepper, etc. It's very hearty and comforting especially in winter.

Slice it into thin strips or cube it. Make spaghetti, add your favourite tomato sauce, the leftover beef, top with shredded cheese. It's easy and it's tasty.

For a healthy boost add some spinach - but not too much. Triples the iron intake of the meal.

Cut up left over roast beef into bite-size pieces. Cut up potatoes in proportion to the beef. Add caraway seeds to taste near when potatoes are done. Separately fry onions in a small amount of oil. Veggie beef soup in a crockpot: throw beef, a couple cans or frozen bags veggies in and a quart of V8. Let it sit overnight on low so the flavors blend. MMMM! Make some cornbread to go with it.

Or beef stroganoff.

you can make roast beef stew in a crock pot with dumplings really good. just put the meat and your choice of veggies in a crock pot mix a gravy from wondra flour and put that in (it will look white but put a beef boulion cube in it and it will change to a brown gravy color and more beefy flavor) and take the bisquick mix and follow directions for dough and drop it in the crock pot with the rest of the stuff and 6 hours later yummmy! also try this web site: beeftips.com they have tons of recipes i swear by them

Blend the roast beef. Make some pastry and stuff the minced meat in the pastry like mini pies, and fry them, they are delicious.

Stir fry. Or how about shredded in gravy for an open face with mashed potatoes. Or shred with bbq sauce for a hoagie with g. pepper, and onion, and melted cheese.

If it isn't already sliced, cut it into 1/2 inch size cubes, add gravy, and put it on top of a bed of egg noodles.

Shred it and add cheese, onions and chili powder then roll up in flour tortillas. Bake or fry in oil. Serve with sour cream to dip them in.
