Chickpea & Cucumber Salad

Mix together:

1 15-oz can chickpeas, drained and rinsed
1 tomato, chopped or 1/2 to 3/4 cup cherry tomatoes,cut in half
1 cup peeled, chopped cucumber (seeded, if desired)
1 small red onion, thinly sliced
1/4 cup coarsely chopped parsley
10 pitted Kalamata olives, chopped
1/4 cup crumbled Feta cheese
6 pepperoncini peppers, sliced

Whisk together:

2 Tablespoons red wine vinegar
2 Tablespoons Olive oil
1 teaspoon lemon pepper
1 teaspoon dried oregano
1 large garlic clove, minced

Pour over salad ingredients. Toss well. Can be served immediately or refrigerated up to 1 day ahead.

Makes 4 side servings.

2 canned chipotle chiles in adobo
3 fresh jalapeno chiles
1 medium onion
2 garlic cloves
3 medium vine-ripened tomatoes
4 cups drained canned chick-peas (2 19-ounce cans)
1/4 cup extra-virgin olive oil
1/4 cup fresh lime juice plus additional to taste
3 tablespoons chopped fresh cilantro leaves
Freshly ground black pepper

Rinse chipotles. Wearing rubber gloves, separately seed and mince chipotles and jalapenos. Mince onion and garlic. Peel, seed, and chop tomatoes. Rinse and drain chick-peas, and in a large bowl stir together all ingredients except additional lime juice.
Chill the salad, covered, at least 2 hours and up to 1 day. Season salad with salt and add additional lime juice. Serve salad at cool room temperature.

Make a mixed bean/chickpea salad. Throw a couple of your favourite types of beans into a bowl. Add the chickpeas, some finely chopped shallots, crushed garlic, olive oil and red wine vinegar. Serve alongside anything for a delicious sweet, tangy accompaniment

Sautee chick peas with an onion and some spinach. Picked that up in a Morrocan restaurant, it's so simple yet so tasty.

Make a 3 bean salad......add the c. peas with some wax beans and green beans, bit of fresh garlic and some chopped bermuda onions. Add some balsamic vinegar and chill. Easy and one of my families favorites.

cholas, easy version would be to take a can of diced tomatoes, can of chick peas, diced onion, your favorite curry spice mix, salt and pepper to taste, throw it in a pot and simmer til flavors meld. great as a side dish or throw in some diced potatoes for a main course stew.

u can make a veggie burger with em. Just check on foodnetwork.com for receipes.

Also as a main course, my mom would cook them with lots of celery some olive oil,,,,then add some cooked pasta to them, like elbows(simmer together 20 min) and its yum yum yum.
