I really like Henckels! They are awesome. Yes, they are expensive, but worth every dime!

As a Chef I personally use Wusthof and Henckel. However, its best to go to a store that sells knives and "try" them out. Ask if you can hold them and feel the weight and how the handle feels in your hand. Each knife is different as is every persons hand. What feels good to me, wont necessarily feel great to you! I personally favor Shun (if you watch ebay you can get them one at a time or in sets at farily good prices). However, even before looking, I advise you to go to several kitchen stores and trying various styles of knives for the feel. if you're left handed, you'll find the Shun uncomfortable because of the grip style.

I love my Henckels. I find the handle weighting and range of blade options is just perfect for the way I cook. I am hard on knives, I don't take care of them as well as I should, but mine have held up for 20 years and will probably last a lifetime. This is like buying a mattress... the fit is different for everyone based on their physical size and working style. Don't just buy blind based on prestige or reputation, you gotta go actually try them out.

I'm a chef, and I personally use Global knives. I find that they are a GREAT value. Henckels and Wustof knives dull too easily and are hard to sharpen.

I prefer Russell Knives. Their world HQ is 15 miles from where I live.

Wusthof has been around since 1814, and their knives are honed by hand. They are by far the best knives to work with. The quality is superlative to any knives I have ever used.
You get what you pay for.

Henkel is a very good knife manifacturer. I especially like the Twin Select line.

Go to Target - they have a fabulous selection of cooking utensils - and at very good prices. I believe they sell Henkels. Target is not as expensive as going to some of the specialty shops that sell such items.
