How about a baked pasta (like lasagna but with farfalle noodles or another type of past)? Or, stuffed bell peppers? Stuffed zucchini? I love meatloaf (if you make a hollow loaf by lining the bread pan with 1/2 to 2/3 of the ground meat mixture, and putting in some cheese, veggies and even refried beans for a Mexican twist and then topping the "loaf" with the remaining ground beef... it's different and good!). Or, how about a shepards pie? Moussaka? Good eatin'!

try italian meatballs.
Mix together 1lb ground beed, 1/2 cup crushed dried bread, 1/2 cup parmesan, 1 egg, some basilr, tarragon, salt and pepper. Form into about 1/2 inch balls and brown in some olive oil. Put into an oven-proof dish, cover with pasta sauce and cook at 350 for about 30 minutes. You can eat it with pasta or in a sub. The same recipe can become meatloaf by adding small cut veggies and stuffing in an oiled loaf pan.
OR
Stuffed zucchini.
Cook your meat with herbs and already-cooked rice. Cut some zucchinis lenghtwise, put onto an oven-proof dish, put meat inside zucchini, and cover with grated cheese. Bake at 350 for about 30 minutes, or ubtill zucchini is tender when pierced with a fork You can substitute zucchini for bell peppers.
Here's a favorite recipe in Quebec. I have never met a kid who doesnt like it.
Chop a med onion and cook your meat with it. Drain off excess fat/liquid. Put in the bottom of an 8"X11" deep baking pan. Layer with a mix of 1 can creamed corn and 2 cans corn kernels. Top with some mashed potatoes. Bake at 350 for 20-30 minutes, and broil for a few seconds. Serve with ketchup.

Here you go - have shepherd's pie. Brown that ground beef with some garlic and put it in am oven safe dish. Put a can of drained peas on top of that and then a can of drained mushrooms on top of that. Top the whoel thing with some instant mashed potatoes (or real if you have it) and then sprinkle on some parmesan cheese. Bake that for about 30 minutes in a 350 degree oven and chow down.
What time is dinner?

Ground Beef and Tomato Manicotti:
1 (8-ounce) package uncooked manicotti noodles
1 (15-ounce) can tomato sauce
1 (10-ounce) can diced tomatoes and green chiles with garlic, oregano, and basil
1 pound lean ground beef
1/2 teaspoon dried Italian seasoning
1 teaspoon salt
1 teaspoon pepper
1 teaspoon fennel seed
1 (8-ounce) package cream cheese
1 cup ricotta cheese
4 cups (16 ounces) shredded mozzarella cheese, divided
1/2 cup chopped fresh parsley (optional)
Cook pasta according to package directions; rinse with cold water. Drain.
Process tomato sauce and diced tomatoes in a blender 20 seconds or until smooth. Set aside.
Cook ground beef in large skillet over medium-high heat, stirring until meat crumbles and is no longer pink. Stir in dried Italian seasoning, salt, pepper, fennel seed, cream cheese, ricotta cheese, and 2 cups mozzarella cheese. Spoon into manicotti shells; arrange stuffed shells in lightly greased 13- x 9-inch baking dish.
Pour tomato mixture over shells; sprinkle with remaining 2 cups mozzarella cheese.
Bake at 350° for 20 minutes or until cheese is melted and bubbly. Let casserole stand 10 minutes before serving. Sprinkle top with chopped fresh parsley, if desired.
Note: Casserole may be assembled and frozen up to 1 month. Thaw in the refrigerator overnight; bake, covered, at 350° for 30 minutes. Uncover and bake 15 more minutes or until cheese is melted and bubbly. If you prefer a smaller casserole, use 2 (11- x 7-inch) baking dishes. Proceed as directed.
Yield: Makes 6 servings

Mix it with macaroni and cheese if you want something really quick. We add bar b que sauce instead of sloppy joe base. Tator tots and cheese with a can of cream based soup is good. You brown the meat, drain, then add the soup with half the liquid it calls for. Then mix with tator tots in a cake pan. Bake for as long as tator tots ask for. Add cheese to top and melt. Its great with ketchup.
