curd cheese, like cottage cheese is the 'whey' part of the cheese with added coagulants to curs the protein, this cheese is a soft curd cheese and is eaten within 8 weeks of production. Cream cheeseis the top highest fat level of fresh soft cheese, a loowacid coagulant is added to protein levels, because of he higher fat levels this cheese has a longer shelf life of around 2-3 months. Soft cheese is any fresh young cheese, usually white in colour and gentle in flavour, eg. ricotta, bocconcini, goats cheese/curd, cottage cheese, quark, cream cheese, all good to eat fresh or cook with, ie salads

Try them both, then you will never forget!! Cream cheese is very smooth and sweet. Curd cheese is also frequently called cottage cheese. What you describe making is the latter. I love it and I have also made it; but, you are so right - I can only imagine how it ruined your pie. I would recommend you purchase some cream cheese and try it on bagels or toast, or use it to make your next Key Lime Pie. Some things are just worth giving in a buying rather than trying to make. I really do not think that the pioneers had Cream Cheese. When we try to have modern foods sometimes we have to sacrifice our desires to make everything ourselves and at least try the store-bought versions a time or two. Good luck, I hope you will try again, the pie is worth it!!
