First of all, the roadkill would have to be immediately taken home to be gutted and cleaned. Throw it in the the trunk or back of your truck. I'm assuming the roadkill isn't in the street in front of your house. That's not roadkill, that's Mittens, your neighbors cat you're eating. Also, hopefully the meat isn't ruined by broken bones rupturing the intestine. If everything looks good, throw it on the grill or chop it up for some stew. Whatever you like. Here's one of my favorite recipes. INGREDIENTS: 1 to 1 1/2 pounds fresh roadkill (cubed) all-purpose flour 2 tablespoons butter 2 tablespoons olive oil salt and pepper dash ground ginger 1/2 cup Marsala wine 3 tablespoons fresh chopped parsley PREPARATION: Heat butter and oil in a skillet over medium heat. Dredge roadkill in flour and brown quickly in butter and oil. Season with salt and pepper and a dash of ground ginger. Pour Marsala wine over roadkill and continue cooking until the wine is reduced to half. Turn the roadkill once during this reduction. When the wine is reduced and meat is tender, remove roadkill to a hot platter and keep hot. Add 1/4 cup chicken broth to the pan. Bring juices to a boil and add parsley. Pour juices over meat. Serve with rice. Serves 4.

No hillbillies do not eat roadkill. My family and I are from rural West Virginia. I have lived here all my life and I know some really country people but I have never ever seen or heard of someone getting a dead animal off the road and cooking it. That is disgusting no matter who you are or where your from. As for the recipes there are all kind of different dishes you can make with meats other than beef, pork, chicken and turkey. They only ones I have tried is Deer and squirrel. They are both actually very good. And no we didn't find them on the road, we go hunting in the woods. Hunting is a big sport in West Virginia

My family are all from West Virginia. A lot of them were pretty rural, so I guess they could be qualified as hillbillies. Plus, I live in Arkansas in the Ozark mountain area. I have never seen anyone eat an animal they scraped off the road. That is unsanitary and disgusting. That being said, people from rural areas do incorporate all sorts of animals into recipes. I have ate squirrel, frog legs, turtle soup, crawfish, snake meat, etc. I have seen people eat raccoons and opposums, although I have never tried either myself.

There are all sorts of recipes for wild game online, just do a google search for it.

Poor people eat lots of stuff the rest of us, thankfully, do not consider food items. Be thankful you don't have to eat roadkill or bugs to get your protein...and go donate something to a food bank

Some people do eat road kill. I am from Louisiana and if you run over a deer and the meat isnt bruised real bad, take it home & cook it! We normally hunt & kill what we eat, but if it jumps out in front of your truck and the meat's still good, why waste your bullets? We are poor folk here in LA

My next door neighbor is a real hillbilly. He made supper out of 2 doves he ran over. He just put a little salt and pepper on them. Gross!!...)(

I wouldn't eat road kill but racoon and rabbit stew is good.....and I was raised near chicago.
