I'm lookin online and i cant find the recipe for trinidad tamarind sauce for pholourie. I'm making pholourie and i need the recipe for the tamarind sauce and all i'm able to find is the recipe for tamarind chutney. If any one knows how to make it or knows a website please let me know.

1 ounce tamarind*
10 tablespoons hot water
1 teaspoon salt
1/4 cup sugar
6 tablespoons rice wine vinegar

* availabe at some Asian and Indian markets

Soak the tamarind in about 5 Tbsp. of hot tap water. Stir until you have a paste.
Strain the juice from the pulp, squeezing the pulp in a small strainer. Discard the pulp.
Place another 5 Tbsp. of water in a small saucepan. Add 2 Tbsp. of the tamarind juice, along with the remaining ingredients. Bring to a simmer and cook, uncovered, for about 10 minutes, stirring often. The color should look like a light brown syrup. You should have 3/4 c. liquid. If not, add additional water and heat again for just a moment.

Store covered in the refrigerator for up to 2 months.

Ingredients
1 cup sugar
1 cup dry red wine
1 4-ounce sugar-coated hot tamarind candy
1/4 onion, thinly sliced
2 thin slices peeled fresh ginger
2 garlic cloves, peeled, smashed
1 1/2 cups chicken broth
1 cup water

Method

Place sugar, red wine, tamarind candy, onion, ginger, and garlic in heavy large saucepan. Bring to boil over medium-high heat, stirring until sugar dissolves and tamarind candy melts. Remove any tamarind seeds. Boil mixture until syrupy, stirring frequently, about 8 minutes. Add chicken broth and 1 cup water; simmer over medium-low heat until thick and syrupy and reduced to 1 1/2 cups, stirring often, about 1 hour. Strain. (can be made one week ahead, cover and refrigerate).
