if you bake the potato with the skin on then it won't dry out... also if you clean the skin, poke some holes with a fork, and roll the potato in olive oil and kosher salt it'll get a really yummy crusty skin...
stems on a mushroom are fine... i would cut the very tip off - its usually a little dry

The skin on the potato has all the vitamins in it. You can eat that as well as the stems of mushrooms. If you don't want to eat the stems, freeze them and chop them up to put in soups or gravies.

Baking potatoes w/the skin on is best for "baked potatoes". you can eat the skin, its where all the vitamins and minerals are. Wash them off first. If you like a soft skin,wrap in foil, if you like a crispy-ish skin, no foil. Yes you can eat the stems of a mushroom.

Clean your potatoes before baking
can do this in the microwave pierce them a few times with sharp knife
you can eat mushroom stems
some recepies tell you to chop them
I slice a whole mushroom from top to bottom and fry with onions in butter and add a little brandy tastes great

Sure just wash them very very well. People that pick potatoes spend all day in the field and they have to pee some place so I suspect a few spuds have been leaked on. Mushrooms on the other hand are grown in the dark and fed crap so I never touch them much less ingest them. if I wanted to eat fungus i could lick a shower curtain. Mushrooms YUCK! and nasty!.

the skin is the healthiest part of a potato its full of potassium, i am not sure about the mushrooms i have never eaten a stem
