A gourmet pizza, speaking generically, is a pizza with ingredients that you wouldn't traditionally find in a pizzaria.

A white pizza with spinach, sun-dried tomatoes, and pine nuts would be an example. As would a artichoke, rosemary, and potato pizza with a pesto sauce. : )

GOURMET PIZZA

1/4 cup unsalted butter olive oil
10 cups thinly sliced red onions salt and pepper to taste
1 cup crumbled blue cheese 2 12-inch plain focaccia bread
1 cup Fisher Chef's Naturals walnut chips, toasted


In heavy skillet, cook onions in melted butter until they are golden brown. Season with salt and pepper. Spread onion mixture evenly on focaccia bread. Spread little chunks of blue cheese over the onions. Sprinkle with walnuts. Bake in a very hot (450° F) oven about 8-10 minutes, or until walnuts are toasty. Brush edge of crust with olive oil.

Yields: 2 pizzas

It's like what they have at California Pizza Kitchen. Like all "gourmet" food, its not very good, but is very expensive.
