What is a brix? Heating the syrup should take care of the crystals.

it crystallizes because the solution has absorbed more sugar than it can handle, and so it crystallizes out. this happens when the syrup is heated when the sugar is added, and then cooled enough so that the syrup becomes too saturated.

Sugar's natural state is crystalline. It will always revert to this in the presence of air. If you don't want your sugar syrup crystallizing, then you need to keep it in a container with a tightly screwed on lid.
