There is a bacteria called Bacillus cereus that really likes to live on starchy foods like cooked potatoes and rice. If your potatoes were left out at room temperature for more than 4 hours, or if your refrigerator is warmer than 41ºF, this bacteria can proliferate on the potatoes. The bacteria releases a toxin that causes diarrhea and vomiting when ingested. This toxin can survive high temperatures, so it cannot be cooked out of food.
So in short: if your taters were stored properly after serving and refrigerated at the right temperature and they haven't been in your fridge for over a week, they should be just fine to eat.
If you said no to any of the above clauses, then toss 'em.

When I have left over potatoes I slice them up and fry them. They are really good that way. Never gotten sick after all these years!
Even if you served them like baked potatoes I really doubt you would get food poisioning.

Never heard that before, we use leftover baked potatoes at work to make potato salad that we eat. But, ya' never know when it comes to food, so if your not sure, don't use them.

If they haven't been in there too long just chop them up and put them in a frying pan, two tablespoons of olive oil or butter, two eggs and fry them like you are scrambling eggs. You can add some onion, salt and pepper if you like or grated cheese.

How long have they been in there? I take it they're baked taters?
If it's only a day or two, peel them and cut the rest into cubes and make American Fries.

Depends how long they've been there, but they can't kill you. They would not taste good cold.
