Porchetta is roast pork. Ham is usually cured and boiled or just cured (prosciutto or jamon serrano). The traditional porchetta is a whole roast pig but the one that you buy at the store is usually just roast loin with herbs (rosemary mainly).

Porcetta is a roasted non-cured pork loin, it is generally very highly seasoned, with either rosemary, garlic or hot peppers.

While it is not as salty as ham, basically it is an Italian Roast Pork, and is nice in a variety of ways for sandwiches, cold platters or anitpasto.

I worked in an office like that once! We put in a ham sammy laced with pureed Scotch Bonnet peppers. It disappeared. It was the last one that ever did though! :-D

I think you mean PANCHETTA?

Pancetta is an Italian bacon that is cured with salt, pepper, and other spices, but is not smoked. Unlike English and American bacon, which are taken from the sides and belly of the pig, may be smoked, and are usually cut into slices, pancetta comes only from the belly, is salt-cured but not smoked, and is generally sold rolled up into sausage shapes.

You CAN substitute bacon in some recipes but it won't be quite the same flavor.
