I always make a stuffing with onions, chicken stock, celery, bread cubes, garlic and sage, thyme, rosemary (poultry seasoning).
applesauce
green salad with tomatoes, cucumbers, radish and italian seasoning
cover the pork chops with salt and pepper and flour and brown it in a cast iron skillet.
then put in the oven with the stuffing below it. 350 degree oven for 20-30 minutes depending on the thickness of the pork chops.
make a gravy from the browned bits at the bottom of the pan with butter, flour, dash of white wine and chicken stock.
Apple pie with vanilla ice cream is the perfect dessert.

Well........ If you want simplicity, I would go with a starch of some kind. Sweet Potatoes go very well with Pork. It all depends on how you cook them. If you bread them and bake them, I would go with simple white rice and a vegetable (green beans???), If you make them with seasoning and maybe lemon, a seasoned rice side with a salad would go well (might I recommend a salad tossed with some fresh fruit and a raspberry vinagirette dressing), Anything with apples would be good for a dessert. Just a few things for you to ponder...

Rice (seasoned with saffron, a tiny dab of Cayenne Pepper, Salt, and Pepper, with small pieces of srambled egg, chopped carrots and peas);
Pickled English Cucumbers with Sliced Roma Tomatos (in Balsamic Vinegrette and Olive Oil)
and
Shitake Mushrooms marinated in soy sauce, sesame oil, and seasoned with salt/pepper.
Sprinkle the plate with yellow and orange curry powder; place the pork chops in the center with a mint garnish; rice to the left; shitake to the right and the pickled cucumbers in a separate bowl with a lime garnish.
Serve with bottled, sparkling water or a glass of white, riesling wine.

spicy mango salsa, sweet potatoes, apple sauce, cole slaw, potato salad, green garden salad... anything that has some sweetness, acidity will pair well with pork. It also depends on how you're cooking them... I assume you're BBQ'ing today, coleslaw and potato salad are quick and easy, especially if you have a good deli at your supermarket ;-)
