Keep fresh ginger in the freezer. When you need to use it, it will be very easy to peel with a vegetable peeler.

Use a spoon-scrape the skin using the "eating" side of the spoon.It works.Otherwise,use a potato peeler.Although a potato peeler will peel away thickly,the spoon will take away only the skin.

scrape it off with a spoon or use a knife and cut it off, peal it all when you buy it, then put it in a baggy in the freezer and it will last a long time and it will be ready when ever you need it.....

VERY SHARP PARING KNIFE....OR JUST USE A GRATER AND DO NOT PEEL.....IT USED IN COOKING IT DOESNT MATTER BECAUSE IT COOKS AWAY...
