My father has hinted at it being a disgusting procses since I was small. I've tried to get him to tell me how it's made, but he refuses. I'll still eat it and he still eats it, but he says it is a gnarly process, how they make it.

Could someone clear something up here for me?

I am the IceCreamGirl, so I shall answer this question.

My answer has two parts, so wait for it.

Sherbet:

Sherbet (in American English) is a frozen dessert made from iced sweetened fruit juice or puree. Sherbets usually have more ingredients, such as milk, egg whites, or gelatin, than sorbets, which are generally made from iced fruit puree and other ingredients. Sherbet in the United States must have a milkfat content between 1% and 2%, and a slightly higher sweetener content than ice cream; else, it must be sold as ice cream if the fat content is higher or sweetener content lower, ice milk if milk or sweetener content is lower, or as sorbet if no milk is present at all. American sherbets have a minimum density of 6 lb/gal (720 g/L) and are flavored either with fruit or other ingredients.

Sorbet:

Sorbet is a form of gelato that contains no milk, unlike ice cream. Sorbets may contain alcohol (which lowers the freezing temperature, resulting in a softer sorbet). Unlike ice cream, the machinery used whips almost no air into the sorbet, resulting in a dense and extremely flavorful product. This allows sorbet to match and sometimes exceed dairy-based gelato or ice cream for taste.

Sorbet is served as as a vegan, or non-fat substitute for ice cream.

The history of Sorbet can be traced back to the 1st century.

There is, however, nothing "disgusting" or even remotely weird about sherbet or sorbet, so eat as much as you want.

Also, one of my favorite drinks (non-alcoholic) is made with sherbet.

It's called a Freeze.

To make a freeze, get some lemon-lime type soda, and put some into a blender. Add your favorite sherbet. Blend. You may need to add more sherbet or soda to your liking. I blend it until it's "slushy". Pour into a glass, add a straw and enjoy. It's REALLY great for hot days!
