I stopped smoking so now I chew gum constantly and I think my head is getting larger.

I mean like the muscles that control my jaw, mainly the ones that run just above your temples, you can feel them protrude if you clench your jaw, they seem to be getting more prominent.

This is not a problem I've had with gum chewing. I'd say what you're experiencing is from nicotine withdrawal.
