Pasta Alfredo...either chicken or shrimp.

With a nice mixed green or spinach salad

Look on allrecipes.com for a recipe.

Pasta is SEXY!

For dessert cheesecake (just buy it) with some strawberries dipped in chocolate on the side.

Good luck!

Hey caluacacia, don't cook anything. You must be already sick and tired of cooking day in and day out in the restaurant you work. So, just have wine and dance with her for a while.
Then, swiftly lead her to your car and go to the nearest restaurant (not the restuarant where you work) where you should have made reservation in advance. Continue with your wine session, if you both like, then you order what you like and let her order what she likes, enjoy a nice candle light dinner and return home!
While having dinner, you can chat with her about cooking - your favourite pastime. That way you get to know her interest in cooking, food, her likes and dislikes, etc. Then you can tell her you will cook for her what she likes, or better still tell her you both can cook together at your place when you have the second date with her! How about that, sounds great!

Before all that, make sure you have some icecream in your frigidaire. On return home, enjoy some nice icecream as dessert and then do whatever you like - I mean mutually acceptable and pleasurable acts! (You know what I mean!) Hope you don't want me to elaborate or demonstrate, do you caluacacia?

However, if you're really keen on doing it yourself, follow what The Grand Inquisitor had to say - this pretty young lady has some wise and interesting suggestions!
Cheers!

Are you insane? Its your first date and your going to cook? Now if your a good cook then that's great but I will guess your not since you don't even know what to cook! Why is the first date at your place? There is a presumption that dates at ones home suggest sex later! do you want to give her that impression? If sex happens great but to plan your date (especially 1st one) around sex is wrong! Listen dump the cooking and take her out to her favorite style food. If the meal is a flop you become a flop! that doesn't mean just the food. So many things could go wrong you need to know her better before you do this.

some sort of chicken with a sauce, veggies with a nice salad and baked potatoes are a good choice. stay away from broccoli ... to be honest i would be impressed by almost anything you cook since I am the cook in the family i would love to have some one cook for me... By the way I love to cook... but if you want the best pasta you have ever tasted email me and I will give it to you..

this all depends on what kind of food thegirl likes--dont have anything too heavy or you both will just go to sleep when you are done. something light but satisfying. are you doing anything else on your date like, going to the movies afterwards or taking a walk?
DON'T have spaghetti ! she might slosh sauce on her shirt and have to change and since this is your first date, im sure she will take hours picking out the right outfit so you dont want to mess it up.
talk to your girl and find out what she likes then go from there.

Look, she will be impressed that you even tried. So no pressure here. Odds are you won't really impress her with your cooking unless you really are good. Just stay safe...like does she have any alergies like to seafood, peanuts, etc...? I hope you asked. Or is she vegitarian? You see how hard this question is to answer?

So just be yourself and cook something simple, simple simple, so you won't mess it up. But have safe alternates available. Like a tossed salad--no cheese or meat on it with a oil/vinegar dressing. Baked potatos are safe and maybe a meatloaf. (hey hey!!! Meatloaf can be very tasty!)

But honey, keep it simple, set a table with nakins, silverware, candles, flowers, etc...the impression will be on your effort more than on your actual deed. I must confess that most women feel superior to men in this area anyway so any positive response she has will probably be condesending anyway. The fact you tried is all that matters.

Something that can be eaten with a fork and is not messy. I suggest:

Baked Arroz Con Pollo : http://www.recipezaar.com/107271

Tossed Salad with any homemade dressing: forget the bottled stuff.

Dessert: Chocolate Strawberry Delight: http://www.recipezaar.com/88492

(both recipes are mine, and are tried and true.) Good Luck on that date!

Fettucini alfredo with grilled shrimp (if you grill or bake them with Cajun seasoning they're SO good). Garlic bread, and grilled veggies. For dessert do a chocolate mousse layered with fruit and cool whip.
