CITRUS GRILLED CHICKEN
A simple marinade flavors tender chicken breasts, which are grilled on a dual contact grill for a super quick dinner.
INGREDIENTS:
1/3 cup honey
1/3 cup orange juice
1/4 cup lemon juice
1/2 tsp. salt
1/8 tsp. pepper
3 cloves garlic, minced
3 Tbsp. oil
6 boneless, skinless chicken breasts
PREPARATION:
In ziplock plastic food bag or shallow pan combine honey, juices, salt, pepper, garlic and oil. Add chicken, seal bag, and turn to coat chicken. Marinate in refrigerator for 2-3 hours. Remove chicken from marinade.
If you want to serve the marinade as a sauce, bring it to a boil in a small saucepan and boil hard for 3-4 minutes until reduced.
Grill chicken on two sided grill for 4-6 minutes until thoroughly cooked. Serve with reduced marinade as sauce if desired.

Try making salads and keep it sealed in plastic containers before you go to work. Cobb salads are great and it is filling. If you can make fried rice, it's great as a late night meal and it's fast! You just have to have the rice precooked the night before. You can also precook meats, seal it real good in the fridge and cook it up when you get home! Baked potatoes are great too. cook the potatoes the night before and put in the fridge. When you come home put them on a plate and microwave them til they get nice and hot. Make sure you cover with plastic wrap first or they will dry out. Then slice them open and put what ever toppings you like! I have tons more but these are the best ideas I have!

There are really no 'rules' as far as babies/toddlers and their schedules are concerned. It sounds like what you're doing is working well - your baby is getting sufficient sleep, and not waking with stomach-ache, and you're spending the evenings together as a family. That's great - if at some point you find problems, or your daughter wants to sleep earlier, or starts waking in the middle of the night ,then you can re-think. But while something is working so well, there's no reason to change it! It doesn't matter when a baby goes to bed so long as they get enough sleep at some point. Too much cereal might cause weight gain long-term, but at this stage breast or forumula milk should still be a big part of her diet, and so long as she's having plenty of protein and veggies during the day, fruit and cereal sounds find as a late-night meal. Cheese can cause sleep problems for some people if eaten in the evening, but if your daughter is okay with it, then that's cool.

My husband works the late shift too. He does most of the cooking in our house. His specialty is something he calls "glop."
He boils water, cooks rigatoni, drains it. Tosses a can of cream of chicken soup over it, some cooked chicken (or a can of Trader Joe's white chicken meat) and seasons accordingly.
Usually with poultry seasoning and Italian herbs.
Warm through. It'll fill you up but not kill you.
My favorite works in the slow cooker or crock pot. I cut up 2 potatoes, four carrots, 2 stalks of celery, and one onion. Layer in crock pot. Place either one whole chicken or cut-up chicken pieces over vegetables. Pour in 1 cup white wine. Cover, leave on low all day. When you get home, the chicken will fall off of the bones. Remove the veggies, thicken the sauce, and serve with salad and bread for a complete meal.

Cesar Salad, with meat for that fulling effect. I usually like a nice soup with some bread on the side.. Campbells Soups do the trick. Or how abpout plain grilled cheese sandwiches?
