I'm with touche, but I'll do the first five.
1) To pull someone's leg is to verbally throw them off balance, by telling them something that is not accurate or true--used most commonly in regard to the exaggeration of tales, or just plain made-up stories.
2) To jump down someone's throat is to overreact, usually to a verbal provocation. This most commonly refers to a verbal response.
3) To lose face is the translation of a Japanese idiom, which signifies the loss of prestige or image, as the result of some personal flaw, or some presented shortcoming.
4) To pay through the nose is generally interpreted to mean being forced--no one ever pays through the nose without coercion--to pay an excessive penalty or price for anything. I believe it derives from the alternative to being struck in the nose--at one time a common means of minor persuasion--the nose being very sensitive to just about any blow.
5) One hits the ceiling under the influence, most usually, of extreme anger or rage--the reference to the exaggerated response to be found in persons under the sway of adrenaline.
