You may not have eaten enough. Give it time and don't give up. You are not going to become Chinese overnight. By the by, I'm pretty much against eating Chinese people.

Because the saying "you are what you eat" does not refer to you becoming that thing that you ate. It simply means that the content of the thing that you eat will affect you in some way. Eating french fries will not make you French, but that same french fry is loaded with grease that can cause you to become fat. Get the thought?

Now, as for your question--the saying is supposed to pertain to the health content of your diet--if you eat healthy, you are healthy, if not, you aren't. Does that help? Taking the saying literally would mean I'm..........I'm taking the "Fifth" on that one!
