Here are some links to online veterinary technician degrees:

I leave it to you to do the research to find the one that best suits your needs. As with all online learning, I'd check first with your local better business bureau just to make sure you're dealing with honest folks who will give you a degree that will get you the job you want.

Personally, I'd highly reccomend the one at Purdue University. I know for a fact that they are a reputable institution and thier degree is very real and carries its own prestige anywhere you go.

I haven't heard of anyone offering such a course online. The first part of veterinary work is different than medicine. Where doctors take a history, vets learn how to open the mouth safely. They need help to do this and that is where you come in. Knowing what it says in the book is good, but when you are working with large animals that are uncooperative, it is imperative that you have "hands on" training about this so that you don't get gored/spit on/stepped on.

Some places train their own vet techs, so you may also want to check into that.
