Most BBQ sauces are made with lots of sugars. Sugars burn (caramelize) quickly, so glaze the meats just before serving and serve with extra sauce on the side. Myself, I don't really like 'sweet meat', unless my gal is there, so I don't use much.
Dry rubs, like the ones from Emeril, are rubbed on hours before cooking, like a marinade, which is also good. Soaking in a brine is also a good way of preparing/flavoring meat before cooking, probably my fave. It makes it jucier and has more flavor.

BBQ!
Carolina Mustard Sauce
Ingredients
3/4 cup yellow mustard
3/4 cup red wine vinegar
1/4 cup sugar
1 ½ tablespoons butter
2 teaspoons salt
½ teaspoon Worcestershire sauce
1 1/4 teaspoons ground black pepper
½ teaspoon Tabasco sauce
In a medium saucepan, combine ingredients, stirring to blend. Over low heat, simmer 30 minutes. Let stand at room temperature 1 hour before using.

Rub it before cooking and serve with sauce on the side....If you want to cook with sauce only brush on outside one time before turning ...My receipes are secret !
...but I will share one for tenderloin...
Have a whole tenderloin cut in 3/4 to 1 inch fillets. Soak them for 3 days in 10 oz of Honey BBQ sauce and a bottle of Boones Farm Country Quencher...Grill only till not pink inside ...yummm........

RECIPE
1 bottle Kraft smoky barbecue sauce
1/2 cup honey
2 tbsp. prepared yellow mustard (French's, etc.)
Combine all and pour over shredded beef, pork or chicken. Bake at 350 in baking dish or place in crockpot on low to warm through.

don't like sauce & rubs have pepper in it which irritates my throat & makes me cough violently. (gave my kids a good laugh watching me try to eat a steak with rub on it)
