Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

I am cold, so something hot and comforting sounds good. shredd your chicken, add a can of chicken gravy, cook some instant rice and wolla. grab a premade salad and hardly any work.
Or layer in a casserole some cream of chicken(any variety works) with some milk to thin it a bit, sliced cheese and cooked egg noodles. I add broccolli sometimes, but do what feels good to you.
Or take your chicken dice it, add some canned diced potatoes, a can of mixed veggies and can of gravy and put it in pie tin and cover with biscuit mix(prepared as directed )
Or take and dice it put a finely shredded apple, celery, mriacle whip, and slap it on some bread and there u go easy clean up

It is a mildly seasoned and delicious recipe and leftover turkey can be substituted for the chicken. This recipe makes 4 to 5 servings. For my family (2 adults, 1 child and 1 toddler) I usually get two meals.
Chicken Curry
1/4 cup olive oil 1 cup onion, finely chopped 1 cup celery, finely chopped 1 green apple, cored and finely chopped (I use Granny Smith apples) 1/2 cup wheat flour 3 cups chicken broth 2 teaspoons curry powder 1/2 teaspoon paprika 1/2 teaspoon soy sauce 1/4 teaspoon garlic powder 2 cups cooked chicken, diced Salt to taste 2 cups cooked brown rice
1. Sauté the onion, celery and apple in the olive oil until tender, about 10 minutes. (When freezing this I will cook it less, maybe 5 to 7 minutes.)
2. Mix flour into the sautéed ingredients and stir constantly for about 1 minute.
3. Remove from heat and blend in the chicken broth.
4. Add curry powder, paprika, soy sauce and garlic powder and mix well. Add salt to taste.
5. Gently stir in chicken.
To freeze: Pour into zippered freezer bags or other containers.
On serving day: Pour thawed mixture into pan and heat completely.
serve with rice or chips

Chicken supreme. Fry an onion and some mushrooms ( and red peppers if you like)in a pan, add a vegetable stock cube, add the chicken. Then add half a pint of milk and a little butter and flour. Stir all the time until the sauce thickens.
Serve with rice.

Curry with peaches and rice... ( don't forget the nann bread and Mango Chutney ).... cook very slow and add 1/2 the peach juice 5min before serving.... Enjoy...
Oh and keep the bones and boil for 30min , use this for sundays gravy base for this Sundays Roast..

A simple salad eg tomatoes, lettuce, spring onion (or pickled onion). If not too diet conscious, crisps too (I go for plain ie ready salted). Add the option of white bread and butter - maybe some of you will make crisp sandwiches!. Sorted - job done

make some stuffing and nice thick gravy mix the gravy and stuffing 2gether spread on crusty bread or rolls or sanwiches add the chicken then sprinkle with black pepper and a cold glass of wine will go down lovely ...very nice yummyyyyyyyyyyyy
