It is better if you look for this kind of accommodation to search for Bed and Breakfast, maybe you can find something on:

As FreshPrince suggested the Savoy is rather nice but expect to pay for it. If you want to splash out go to the Westin Excelsior http://www.starwoodhotels.com/westin/property/overview/index.html?propertyID=43 or Grand Hotel (opposite each other) http://grandhotel.hotelinfirenze.com/main_en.htm?source=googles they have a 4 poster bed, and you won't forget it for the rest of your life, so would you wallet probably.
Another hotel I like is the Grand hotel Baglioni http://www.hotelbaglioniflorence.com/
Nice city Florence and very good food.

The Hotel David, Viale Michelangelo 1, Firenze is lovely. Very traditional Florentine and just a few minsutes walk along the Arno to the town centre.
Also try www.venere.com. You can search by location and property type and there's photos and customer feedback.
Buona fortuna

not too familiar with the rustic hotel. we always stay at the hotel savoy, and we always get the 4 poster bed there (we get the suite whenever we stay)
there are a lot of hotels around, so you should not have any problems.

if you can spare the drivwe, stay in an agriturismo nearby. they have great food and the host's are usually friendly and fluent in english, and agriturismos are very rustic.
