Beef cheek is literally the cheeks of the cow so from the head of the cow. It can be a tough cut of meat due to all of the use the jaws get from chewing, but cooked long and slow it becomes very tender and almost sweet. Some people consider it some of best beef when cooked properly.
I did find some reference that "Beef Cheek" can contain lymph nodes and salivary glands from the cow, but should be noted on the packaging. A label of "Beef Cheek Meat" alone should not contain anything but the meat.

Veal Cheeks are the absolutely delicious cheeks of a baby cow.( yes teh real cheeks, from around the mouth). They are more tender than beef cheeks because they have perfected the way of raising them. Veal production is often considered cruel. However it pales in comparison to the treatment of chickens and pigs. You're a human, enjoy some meat!

It is the actually meat of the cheek -- on the head of a cow. It's a "cheap" cut -- not often purchased or sold as such, but usually ground into a sausage or included (usually no more than 25%) in ground beef.
