Chicken Marinade
INGREDIENTS:
2/3 cup olive oil
2/3 cup reduced-sodium soy sauce
1/4 cup lemon juice
2 tablespoons liquid smoke flavoring
2 tablespoons spicy brown mustard
2 teaspoons ground black pepper
2 teaspoons garlic powder
4 skinless, boneless chicken breast halves
DIRECTIONS:
In a large bowl, mix the olive oil, soy sauce, lemon juice, liquid smoke, mustard, pepper, and garlic powder. Place chicken in the bowl, and coat with the marinade. Cover, and allow chicken to marinate a maximum of 4 hours in the refrigerator.
Preheat the grill for high heat.
Oil grill grate. Discard marinade, and place chicken on grate. Cook 6 to 8 minutes on each side, until juices run clear.

If you are roasting them, how about adding fresh rosemary and garlic?
it would be better if you used quartered chunks of lemon rubbed on the legs and roasted with it, but I'm sure the juice will be fine - it should mellow and be sweeter.
Even better, peel the garlic, leave them whole or cut in half...then stab a slit in a chicken leg and poke the bit of garlic in the whole. repeat this all over the legs with the bits of garlic and small sprigs of rosemary. Black pepepr will be nice over it, too.
This meal will go really well with any potato dish...roast, mash (lots of gravy!) or I think I'd do boiled new potatoes with chopped chives & butter.
By the way, when garlic is in large chunks like that and roasted, it also takes on a mellow, nuttier flavour than for example crushed garlic.

My mum makes a simple marinade similar to this. She mixes lemon juice, olive oil, salt and pepper with bay leaves (she has a bay tree in the garden) and any other 'exciting' herbs she finds in the cupboard, usually some mixed ones. She mixes this together and then covers the chicken in it (or whatever other meat). Leave it for a few hours and hey presto! All you gotta do is cook it after hehe!

You have a good base right now. So, I'd advise adding very little -- crushed/squeezed fresh garlic and oregano.
If you keep adding stuff, you'll be in danger of not only losing the chicken flavor's contribution to the palate, but also of creating a combination that might taste like a mish-mash.
Cooking's an art. The trick is not to add ingredients but to make the most of a very few compatible flavors.

You need more seasoning. The lemon and olive oil is your base. Pepper, granulated garlic, granulate onion and some oregano would make it a greek marinade. add basil and its more italian style. Add some carribean spices for an island flare. But your base is good.

Rub finely chopped chilli and paprika into the chicken and then marinade with the lemon oil and salt.

I love basting the chicken in garlic, rosemary and lemon, delicious.
Just try any combinations - there is no such thing as "not a very creative cook" - don't be afraid, just give it a go!

I would add honey to help the marinade stick to the chicken plus it tastes yummy and also chopped chillie's according to taste for a kick.
