The weight isn't actually a factor. There were tests done and they found that the average height that bread was dropped from was just about right for the bread to turn 180 degrees. If it's lower, it will stay right side up. If it's a fair bit higher it will land right side up too. This isn't always the case but then it doesn't ALWAYS land face down!

Distance.
"Mythbusters" worked on this one and found the difference between sides is really marginal (buttered side won 52 to 48)
