In both cases, it really makes no difference. Word order is fine either way.

However, in #2, you may want to say, "Which of the following models IS more stable..." if you have only one model in mind. If two or more models are more stable, the sentence is ok as it is.

1. We will always be.. (the verb is put always as no. 2 in the sentence after the noun).

2. Above figure (although most of replies saying figure above, but think, do you say: Red Ball or Ball Red - "above" is also describing "which Figure", so it has to be above figure, Not figure above.

1."Yes, we will always be" sounds incomplete - will always be what? "Yes, we always will be." or: "Yes, we will always exist." is a complete sentence and makes sense.
2. you are technically not allowed to end a sentence in a preposition (commonly known as "anywhere a mouse can go") - so you cannot end the sentence in "above."

1) Yes, we always will be.
2) Either one is fine. I've seen both used.
