There are several techniques. Many extracts are either alcoholic or water extracts. The alcoholic extracts might serve your purposes better. Use fresh ginger roots...not wrinkled....peel and slice into very thin sections or use a blender to release the essences....then add food grade ethanol and soak for a minimum of 24 hours ...or longer...if you want a dried product, then filter and dessicate but the amount remaining will be quite small...only yielding micrograms per ounce. But as a liquor, I would suggest about a ratio of 1 to 1 (ginger to alcohol) and after filtration, you'll have about an ounce of alcoholic extract. Powder ginger requires only drying and grinding. The best ginger is #1 grade Chinese ginger.

i think zinger is undergroung shoot. the roots of zinger have no use. only the zinger (underground shoot) is used for various purpose.
