Mice are mammals, so share many similarities with humans, which makes the research more likely to be accurate when considering the effect on humans. Another important factor is the availability of information on the mouse genome. Since it has been fully mapped (in the same manner as the human genome), it is easier to make transgenic mice.
Mice have short lifespans (not long to wait until they die), are easy to breed, require little space to house and are relatively cheap/easy to keep in terms of food. They don't require expensive environmental enrichment that a monkey would need; some bedding, tubing and some companions deals with most of a mouse's environmental needs.
Mice have also been inbred for many years for scientific experiments and their lineage recorded. The inbreeding means that a certain lineage of laboratory mice are likely to have the same genetic makeup, making the tests more consistant (as the experimenter knows that the genetics are controlled and not influencing the difference in results).

They are easy to breed and to handle. And they don't require an expensive diet.
Other popular lab animals are:
Chicken: it's easier to follow the embryo's development in an egg than inside the mother's body. And chicken are domesticated so they are easier to handle than wild birds.
Zebra fish: transparent so the development of the organs can be easily be studied.
Fruit flies: extremely easy to breed.
But mice are mammals so they are more similar to humans than are chickens. Sometimes, when larger tissue samples are needed or when the small size of mice make them unrealistic as models for humans, larger animals such as rats, rabbits or pigs are used.

Rats and mice, the most commonly utilized vertebrate species, are used in large proportion because they are small, inexpensive, easy to handle and care for, and reproduction is imminent. Mice are considered the prime model of inherited human disease, are genetically tractable and share 99% of their genes with humans.
