Try Chinatown - esp good if you are not from these parts. Some interesting sights plus shopping of a different kind.
Little India is worth a visit. But go in the day when it is less crowded.
The more recent Esplanade (our theatre) is worth checking out as well. Love it or hate it ! It near the esplanade and there are some shops and some areas where you could take some photos too.
If she likes history, Singapore River, Heritage Walk and Museum could pay off too.
And finally, we're a country of "eaters" - we love our food. Take her to try out the different types of food at the various "hawker centres". Don't go to the restaurants - you can do that back home.
Guess that's what I can think of now. I'm sure others would add to this list.

why not try mout faber? That place had changed alot. Check out the website at www.mountfaber.com.sg and take a look. After viewing that place, you can take a cable car ride from mount faber to sentosa. Maybe you can go there at 7plus where you can see the beautiful lightings at mount faber from your cable car ride.

Hire a car and drive her across the causeway to Malaysia. Take her for a meal at that place where all the stalls serve different specialties. Take her for a boat trip to Rhio.

Why don't you find out first what she likes? Then bring her to do the things she likes. Her objective may not be sight-seeing. Do you know? She may just want to get to know you better, or be with her son. I am sure her main concern would be how her son's life is, after getting married.
What about shopping? Most women like to shop. Wouldn't it be great to know what she really needs, then buy it/them for her?

hmm... just bring her to clark quay to cruise around singapore river and have dinner there than bring her to orchard road for some shopping before end up at Chinatown for sum snacks!!

Have you ever brought her home to cook for her yet then? Again you can try orchard downward to bugis for shopping for a change and chinatown for morning breakfast and afternoon tea..
