Spinach and Avocado Salad

1/2 cup sliced avocado
1 tsp. lemon juice
3 cups baby spinach leaves
1 small blood orange or naval orange, peeled, cut into sections
1/4 cup KRAFT CATALINA Dressing
3 Tbsp. orange juice
2 Tbsp. PLANTERS Pecan Halves, toasted
TOSS avocado and lemon juice in medium bowl. Add spinach, orange sections, dressing and orange juice; toss lightly.
SPOON onto 2 serving plates.
SPRINKLE with pecans just before serving.
Mediterranean Salad with Feta Cheese
Prep Time: 15 min
Total Time: 15 min
Makes: 4 servings, about 2 cups each
4 cups mixed salad greens
1 cup chopped plum tomatoes
1 cup coarsely chopped pitted kalamata olives
1 medium avocado, peeled, pitted and chopped
1 pkg. (4 oz.) ATHENOS Traditional Crumbled Feta Cheese
3/4 cup canned chickpeas (garbanzo beans), drained, rinsed
1/2 cup thin red onion slices
1/2 cup KRAFT Balsamic Vinaigrette Dressing
TOSS all ingredients except vinaigrette in large bowl; cover.
REFRIGERATE until ready to serve.
ADD vinaigrette; toss to coat.

Guacamole
Yield: 1 batch
3 Haas avocados, halved, seeded and peeled
1 lime, juiced
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne
1/2 medium onion, diced
2 Roma tomatoes, seeded and diced
1 tablespoon chopped cilantro
1 clove garlic, minced
In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice, after all of the avocados have been coated. Using a potato masher add the salt, cumin, and cayenne and mash. Then, fold in the onions, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve.

COBB SALAD
3 slices bacon, cut in half
1 ripe avocado, split, pitted, and diced
2 ripe tomatoes, diced
2 hard-cooked eggs, chopped
Kosher salt and freshly ground black pepper
8 cups mesclun greens (or substitute chopped romaine)
2 cups shredded cooked chicken
1/2 cup blue cheese dressing
Spread the bacon out on a paper towel on a microwave safe plate. Cover with another piece of paper towel, cook at full power in the microwave for 3 to 4 minutes or until crisp. Cool.
Meanwhile, in a large salad bowl, layer the avocado, tomato, and eggs, seasoning them with salt and pepper, to taste, as you go. Top with the mesclun greens, then scatter the chicken on top. Crumble the bacon over the salad. Bring the salad to the table and toss with the dressing so all the ingredients are evenly mixed together. Serve.

I am not sure if you like sushi or not..but I do and this is my favorite recipe for california rolls. So there is no raw fish. I think you will like it and the seaweed is really good for you too. I love avocado.
Ingredients:
4 nori sheets
3 cups (15 oz / 470g) sushi rice
8 teaspoons ocean trout or flying fish roe
1-2 cucumbers, cut into thin, lengthwise slices
8 jumbo shrimp (king prawns), cooked, shelled, veins and tails removed
1-2 avocados, peeled, pitted and sliced
4-8 lettuce leaves, torn or sliced (optional)
Oh I almost forgot you can sub the fish out for imitation crab meat and leave off the fish row if you like.

Cream of Spicy Avocado Soup
3 jalapeño peppers, stemmed and seeded
2 Tbsp. Butter
1 cup finely diced sweet yellow onion
4 cloves of minced garlic
2-3 diced Haas avocados
2 cups diced fresh or roasted tomatoes
8 cups heavy cream
1 bunch cilantro, stemmed and chopped
sea salt and pepper to taste
Carefully mince jalapeños and chop onions, then slow cook in butter in a heavy-bottomed pan. Add garlic and stir until onions are translucent. Turn heat off and add avocados, tomatoes, and cream. Turn heat to low and carefully bring to a simmer. Cook at a gentle simmer for 30 minutes. Stir often to keep liquid from scorching. Add generous amounts of salt, cracked black pepper and cilantro. Garnish with cilantro leaves.

I'm a purist, I love to keep it simple. Easiest thing in the world is to cube an avocado, mix it with some good fresh organic cherry tomatoes cut in half, throw in a few pitted nicoise olives, add a can of good quality Italian tuna (packed in olive oil), toss with a little bit of balsamic vinegar and some fresh herbs... and voila! A bottle of Pellegrino and a slice or two of crusty Italian bread, and you have lunch.
Or another variation, just as easy... start with a bed of good organic arugala or baby spinach, slice your avocado, alternate avocado slices with slices of nectarine, top with half a dozen grilled or steamed prawns, add a few chopped and toasted hazlenuts, drizzle with a citrus champagne vinagrette.

My family and I like sliced fresh avocados and tomatoes, lightly salted with a wedge of lemon squeezed over. Very simple, but summery and a wonderful blend of textures. Also we like avocados halved with my fresh homemade nectarine salsa in the middle (see link).

chopped avocado, cooked chilled shrimp, tomato chunks, with butter lettuce.
use a oil/vinegar dressing made with
1/4 cup balsamic vinegar
1/2 cup olive oil
1 tsp sugar
1/4 cup water
1/2 teaspoon 1/2 teaspoon Italian seasoning
1 clove garlic crushed.
put it all in jar and shake will make enough for several salads.

not a salad recipe but a sandwich,,,,,
small baguette, sliced lengthwise. drizzle with olive oil, some coarse pepper and then slice a fresh avacado and place on top, alternate avacado, fresh plum tomato and fresh mozarella and fresh basil, drizzle again with a bit of olive oil.
