I've never ever been to Houston, but for nice photoghaphs, make sure there's plenty of light on the subject, but not bright sunlight. Try and take your pictures when the sun is behind the clouds, as the clouds make a good filter; it also helps if you get a 'no sky' back ground. A green (i.e. bushes, trees) back ground works well.
Since they are engagement pictures, try and get something in the picture that is NOW, like a billboard in the back ground. Billboards look great in vintage photographs, and one day, your photographs will be vintage. A billboard depicting the latest film would be ideal and in years to come, someone thumbing through your photographs will say 'Gosh, look at that billboard, it must be 2006'! Cars are another thing that will give your pictures a NOW look.
Have your picture taken next to recognisable buildings and monuments in Houston. Be careful what you wear though and how you style your hair. Ask yourself: 'Will this look old fashioned in ten years time'?
Experiment and take plenty of photographs. Some won't work, some will. Enjoy your engagement and the best of luck.

That's like asking for a cool, shady spot in Hell. Drive up to the hill country, then find a nice house and move in.
