You can't go wrong with baked or BBQ chicken. Add a baked potato with diet margarine and a salad, and he should be happy. Serve angel food cake with fresh or frozen strawberries (sweetened with Splenda and topped with lite Cool Whip.

Roast a good big chicken, tuscan style - rubbed with olive oil and fill the cavity with lemon halves and fresh herbs so they flavor the meat. Then you can get several meals out of this... serve it for dinner with a side salad (plain olive oil and vinegar, no bottled dressings!) and non-starch, low sugar veggie like green beans or zucchini. Then the next day you can make sandwiches with a sugar-free whole grain bread, mustard (instead of mayo) and lettuce and tomato, and use the carcass to make a good rich soup (skim the fat off) with plenty of onions, celery, red bell pepper, and fresh herbs (a little brown rice optional, but no noodles).

You can also make meatloaf with ground turkey breast, lots of very finely chopped veggies, fresh herbs and a can of tomato paste. No bread crumb, no egg, no bottled ingredients like ketchup or worcestershire (lots of sugar!).

What an amazing blessing to have your grandfather with you. Cherish every minute. I never even knew my grandfathers, so I envy you.

My mother is a diabetic (severe) and can not have sugar.

I just cook meals that are meat (broil or bake) no breading, veggies, and if it is suppose to have sugar then I use splenda and Walmart has a version of it called Altern.
And keep a lot of fresh fruit around for snacking.

I would say get on a couple of diabetic websites for recipes that contain no sugar. I have a couple of friends who are diabetic and they go on those websites all the time for ideas.

It depends on whether or not you are named in his will. If you are a major benficiary and stand to gain financially, feed him things with lots of sugar before he has time to change his mind. If you are not inthe will at all, only feed him things containing no sugar so he will have time to change his mind.
