The other day I ate at a delicious Thai restaurant and got this incredible crispy basil. It was just crispy, not wilted or anything and tasted just like regular basil.. almost like a basil chip! I tried googlen looking for a recipe with no luck, so does anybody out there know how to recreatre this masterpeice? Thank you!

I have never had crispy basil, but I have had crispy spinach leaves. I'm assuming they were similar. I know that the restaurant I had the spinach leaves at, fried them to get them that way. Unfortunately, I rarely fry, and have no idea of how to do spinach leaves-- maybe a light vegetable oil in a deep fryer?
Also, they may have been dried. I know you can do this with other herbs--that, I have done. If your house isn't humid, you can just put them in a cool dry place. If that is not the case, i think Walmart sells reasonably priced food dehydrators. Or you can put your oven on low, and dehydrate stuff in there for a few hours.

It is deep fried for a little bit.

Heat oil in a large skillet over medium-high heat. Cook basil in oil until it begins to get crispy and has a strong basil smell; this will take several minutes. Scoop basil out of oil with a slotted spoon, and drain on paper towels.

I think if you go to allrecipes.com it will of course give you the recipe!!!! that sounds good by the way!.

bake it in the oven and that will get it to harden with olive oil
