Recipes cannot call for any dairy, i.e., butter, cheese, milk (or must easily be substituted with other items) and must appeal to both a 10 and 14 yr old. A single dad with minimal cooking experience and time must be able to easily follow the recipe! Current favorites are pasta, pasta, pasta! These kids (and dad) need some variety!

Oh my! If you are meat and potato people, this question is easy.
Hamburger (Angus medium is fresh, never frozen and chuck only) fried with onions, one shake of minced garlic, pepper and a little green or red peppers.
When cooked, pour a can of gravy over and let simmer a few minutes. Serve with boiled or mashed potatoes and frozen peas or boiled carrots. You can also use rice instead of potatoes. A quick way to do veggies is in a steamer. You can put carrots, corn on the cob, broccoli, all in the steamer and have only one pot to clean after. Only spice required is parsley and/or pepper or celery salt.
Another meat that is easy is pork chops. Wash off, put in a glass dish (that can go in the oven), flavour with pepper, pinch of salt, garlic, onions; cover and bake for about 50-60 min. then remove the cover and let brown. As a topping, you can add BBQ sauce (Kraft) or a little ketchup or that same gravy from the previous recipe.

What about tacos, they have cheese that is non dairy for vegetarians, boco burgers, pasta salads let the children help u decide what to go into it, buit there is non dairy milks, soy and what have u rice milk, I did home health and many clients, used rice milk, veggie cheese, with these new items for vegetarians and is easy to take normal everyday favorites and make them into your own. I am not inot the veggie substitutes myself , but just brwose thru the shopping isles as i had to. Also, I love making stuffed squash, any filling u like rice veggies(spinch, broc. etc) meat, use those veggie crumbles and fill and bake( bake semi before stuffing the squash so its tender.) let the chilfdren pick ingredients. They can stuff them too, Good luck and hope you have good responses.

well I guess mac and cheese is out.

Here's a good pasta recipe but try allrecipes.com to find some variety. You can also find some nice women if you're looking to cook for someone other than your kids sometime.


Mari's Chicken and Pasta
INGREDIENTS:
12 ounces fettuccini pasta
1 tablespoon olive oil
4 skinless, boneless chicken breast halves, chopped
6 cloves garlic, minced
1 cup chicken broth
1 cup dry white wine
1 cup frozen green peas
1 tablespoon dried parsley
1 1/2 cups chopped fresh tomato
2 green onions, minced
1 pinch cayenne pepper

DIRECTIONS:
Bring a large pot of lightly salted water to a boil. Add fettuccini pasta and cook for 8 to 10 minutes or until al dente; drain.
In a skillet over medium heat saute chicken and garlic in oil until brown and cooked thoroughly. Add chicken broth, white wine, peas, and parsley; bring to a boil. Reduce heat and simmer for 15 minutes.
Remove from heat and add tomatoes, onions and cayenne pepper. Toss sauce with cooked pasta.

BEANS and POTATOES

Wow, you have a tight diet I see!.But kids often dont like beans--but they need the protein, especially since you are Vegans.

Um, you can boil some pinto beans for 1 hour--cover the pot halfway with water and boil, adding some Adobe seasonings.

And fry some potatoe steaks from the frozen food section--they'll LOVE that.

easy for the dad that has less experience with food preparation skills. you can do the shake and bake meals w/chicken or pork,side dishes of green vegs. country crock potatoes w/gravy.
fish portions with fries and slaw/salad. bucket of chicken with sides that are tolerated. also google lactose intolerant recipes for more help.

Mini Corndogs
1 box cornbread mix (I use Jiffy brand) (prepared with ingredients needed but not baked)
2 pkgs. mini hot dogs or "L'il smokies"

Dip hot dogs in prepared cornbread mix using fork and drop into hot oil to cook. Cook 1-2 minutes or until golden. Serve with mustard and/or ketchup.



Ground Turkey Stroganoff
1 (8 ounce) package uncooked egg noodles
1 tablespoon vegetable oil
1 pound ground turkey
1 tablespoon minced onion
1 cube chicken bouillon, crumbled
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 cup water
1 can (stems and pieces) mushrooms, drained
1/2 cup sour cream (optional)
salt and pepper to taste

Bring a pot of lightly salted water to a boil. Place the egg noodles in the pot, cook 6 to 8 minutes and drain.Heat the oil in a skillet over medium heat. Place the turkey and onion in the skillet and cook until turkey is evenly brown and onion is tender. Mix in the bouillon. Stir the cream of mushroom soup and water into the skillet. Cook and stir until heated through. Stir in sour cream and mushrooms, season with salt. Serve over the cooked egg noodles.



Firecracker Drumsticks
8 chicken drumsticks
1/4 cup hot pepper sauce
1/3 cup all-purpose flour
2 tablespoons yellow cornmeal
1/2 teaspoon salt
3 cups vegetable oil

To Marinate: Remove skin from chicken and place in a resealable plastic bag. Pour sauce over chicken, seal bag and refrigerate to marinate for at least 1 hour, up to 24 hours. The longer the chicken marinates, the spicier it will be. In another resealable plastic bag combine the flour, cornmeal and salt. Add chicken, seal bag and shake to coat. Heat oil in a large, deep skillet to medium high heat. Add chicken and fry, uncovered, for 25 to 30 minutes or until juices run clear. Turn occasionally to brown evenly.



Salmon Patties
1 can salmon, bones removed
1 egg, beaten
1/4 onion, minced
1/2 sleeve saltines, crushed fine
1/2 tsp seasoning salt, garlic salt or cajun seasoning

In bowl, combine all ingredients, mixing well. Form into patties and fry in oiled skillet.



Meatloaf
2.5. hamburger or ground turkey
1/2 cup crushed saltine crackers
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato paste plus 1 1/2 cans water, mixed

Topping
1 can condensed tomato soup
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute

In bowl, combine beef, onion, garlic, eggs, and crackers. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Pour water and tomato paste mixture over and bake for 30 minutes at 350. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.


Chicken and Rice Soup
2 cans Hormel Chunk Chicken or Chunk Turkey
1/2 cup dry rice
2 chicken boullion cubes
8 cups water
1/2 onion, diced
2 carrots, diced
2 stalks celery, sliced
1 can mushroom pieces and stems, drained

Combine all ingredients in heavy-bottomed pot or in slowcooker. Cook until rice is cooked through about 30 minutes on stove or 3-4hrs on high or 6-8 hours on low in crockpot. Freeze leftovers.
