Use something domestic and non-vintage (sparkling wine). Save your money. Save the Dom for a big occasion.

You should only use Tosti Asti Spumante--definitely the tastiest.
When making your mimosas, fill the pitcher half full with orange juice and then pour the Tosti gently into the juice along the sides of the pitcher. POUR SLOWLY, and try not to allow it to fizz. The extra effort is worth it. Take a spoon and SLOWLY do a single figure 8 around the inside of the pitcher. Then, carefully pour into glasses (along the sides, of course) and you will have a mimosa with the maximum amount of fizz.

Prosecco - sparkling Italian wine. Inexpensive and tastes great...in mimosas or any other champagne drink...oh, and just chilled out of the bottle! If you've never tried it, I highly recommend it.

I use Martini & Rossi's Asti. It's not super expensive and it definitely gets the job done!
