The Gilgamesh Epic in Ugaritic would be one of the earliest. Part of the Biblical creation account comes from it.
A fun one to play w/ is the never translated writings of 3 kingdoms south of the 5th cataract of the Nile. The shards we have have writing of dots, dashes and spaces. Even our best computers haven't deciphered them.
