Chicken legs upon a mixture of vegetable...
for two persons:
Two big chicken legs, spiced with some rosmarino and majorane a bit of chili, pepper and salt to lay on a mixture of potatos pieces (six small ones or four big ones), some pieces of carrot, pieces of zucchini, dried tometo, vinegar and onion, add same small pieces of fresh rosmarino... Pour about 200 ml of olive oil on the whole thing than put it in a preheated oven, about 180 °C for about 50 minutes... After 50 minutes pour some dry white wine (about a qaurter of a bottle) on it and keep it in the oven for another 10 - 15 minutes...
Had it with a friend of mine this evening, it is sooooo tasty!

We had a surprise birthday dinner/party for my 8 year old granddaughter at my daughter's and son-in-law's home with about 40 people there. We grilled hot dogs and hamburgers, had potato salad, macaroni and cheese, cowboy baked beans, fresh sliced tomatoes, Vidalia onion slices, pool room slaw (to make slaw dogs and slaw burgers...it's a Southern thing!), pickles, olives, cupcakes for the kids and a Butterfinger cake; Hawaiian punch and Sundrop to drink. A good time for all !

I cook all week and then usually weekends too... but this weekend I informed my husband HE was cooking for US. So... I heated up leftovers for the kids... and tonight (for after the kiddies are down for the night) he's fixing chicken parmigiana with zucchini and cappelini, garlic bread, and if I'm lucky, a salad - lol
(Last night he fixed some Mexican beef kabob with Spanish rice and a salad with fresh cilantro... it was very good!)

Grilled Vegetables
I use summer squash, onions,potatoes,bell peppers,mushrooms or just any fresh vegetables that you like .cut into large pieces,season with garlic powder,salt and pepper. put into foil packet pour on Kraft fat-free Italian dressing, may add a little butter if you like wrap tightly and throw on the grill till veggies are tender, but be sure not to overcook , you don't want soggy vegetables. Also good ,add link sausage cut into bite size pieces with vegetables, then you have a whole meal in one packet.
