My family spent five years as vegetarians and did just fine. Didn’t notice any change in our health for good or ill.
She changed her mind first and I caved shortly thereafter. My first meal was a filet mignon that was so tender that you didn’t even need a fork to cut it. Had McD’s and pepperoni pizza the next day. I was afraid of the shock my system might have to endure but never had a problem, not even a little heartburn.
Since then, every time I have an especially tasty critter (sushi, yummy steak, etc.) all I can think to myself is “five wasted years.” I try to make up for it by making sure that there are at least two animals in a meal whenever possible.

The first time or two that you eat meat if you haven't eaten it for quite some time, you could get a small case of the runs, but it will go away within the day. If you continue eating meat, it won't happen anymore.

I had a friend throw up after eating meat. She wasn't a vegetarian for that long though. Of course, all that chain smoking probably got her nauseous as well.

Yes - I was a vegan, and tried to incorporate fish and eggs, and dairy into my diet for health reasons - it took a long time, but I remembered a Mrs. Piggle Wiggle story - so I used VERY small portions at first, then gradually increased them. I did the same thing with my sons when they were alleergic to milk. It just takes time for your body to adjust.

Some people take a while to get their digestive systems accustomed; try taking small portions.
However, I had no trouble going back to meat.
