I am still working on building my Barbecue Recipe Blog. All of the recipes on the blog (except for my own) have been donated by people from around the world. If you have BBQ recipes (main dishes, vegtables, desserts, whatever!!) that you'd like to share, please let me know.

Latin Grilled Halibut with Green Sauce:

6 small halibut, about 3/4 inch thick (about 2 and 1/2 pounds)
1 tablespoon olive or vegetable oil
1 teaspoon seasoned salt
1 jar (16 oz) green salsa (salsa verde) (2 cups)
1 ripe avocado, pitted, peeled and chopped
2 tablespoons chopped ripe olives
Sour cream
Fresh cilantro leaves

Brush fish lightly with oil; sprinkle with seasoned salt.
Grill fish uncovered 4 to 5 inches from medium-high heat about 10 minutes, turning once, until fish flakes easily with fork. Mix salsa, avocado and olives. Serve over fish. Garnish with sour cream and cilantro. Enjoy!!

1 tablespoon corn starch
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon paprika
1 teaspoon sugar
3/4 teaspoon crushed chicken bullion cube
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin

Combine all ingredient with 1/4 cup of olive oil and marinate overnight. Grill the next day.

This recipe has a really good tex-mex flavor.
Really good to make fajitas or just for a change from
regular barbecued chicken.

This recipe is from my mother
It's her own "Carmel Nut Poundcake"

5 Large eggs
1 cup granulated sugar
1 pkg light brown sugar
3 cups Swan's Down Cake Flour
1 cup milk
1/4 cup Crisco shortening
1/2 lb real butter
1/2 teaspoon baking powder
1/2 teaspoon salt
1 Tablespoon Vanilla
1 cup chopped pecans

Cream butter, shortening. and brown sugar.
Beat til light and fluffy.
Add eggs, one at a time, beating well after each.
Sift together dry ingredients and add alternately with milk (begin and end with milk) to creamed mixture.
Add vanilla and nuts. Beat in well.
Bake in prepared large tube pan for about 1 hour at 325 degree oven or until when tooth pick inserted comes out clean.

Oven BBQ Chicken
1 cup ketchup
1/2 cup diced onion
3 tablespoons firmly
packed light brown sugar
2 tablespoons cider vinegar
1 teaspoon dry mustard
1 teaspoon Worcestershire sauce
8 chicken pieces
(4 boneless skinless breast halves and
4 drumsticks)

1) preheat oven to 350 F. combine ketchup, onion, brown sugar, vinegar, mustard and Worcestershire sauce in small saucepan. Cook over medium heat until mixture begins to boil. Reduce heat to low. Simmer 5 minutes, stirring occasionally. Remove from heat.

2) Coat a 13- x 9- inch baking dish with cooking spray. Arrange chicken pieces in the prepared dish.

3) Brush prepared sauce over chicken. Bake chicken until it is no longer pink and an instant-read thermometer inserted in center of meat registers 180 F, 40-50 min.

CURRIED MUTTON KEBABS
6 mutton chump chops
Salt and freshly ground black pepper
1 onion, finely chopped
30 ml curry powder
10 ml sugar
5 ml corn flour
60 ml vinegar
12 rashers streaky bacon
12 prunes, soaked and stoned
MAKES 6 KEBABS
Cut each chop into cubes and season well. Fry the onions in the butter. Add the curry powder, sugar, corn flour and vinegar to make a coating sauce. Cool. Pour over the meat, mix well and leave overnight. Thread the meat on skewers alternately with the bacon and the prunes. Grill, while turning frequently for about 15-20 min (instead of grilling, barbeque!!!!)

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.


Garlic Chicken Breasts with Brown Sugar
This is so easy and very good!
Tbs oil
6 or more garlic cloves, minced
1 Tbs brown sugar
3 boneless skinless chicken breasts

Preheat the oven to 500F.

Heat the oil over medium heat, add the minced garlic and cook slowly, stirring constantly, until softened. Make sure the oil is not too hot. You don't want to brown the garlic and it can get to that point quickly if you're not careful.

Take it off the heat after 5 minutes or so and add the brown sugar and stir it in.

Line a shallow roasting pan with foil and spread oil across the foil. Lay your boneless skinless chicken breasts across it, spread the garlic/oil/brown sugar mix across the chicken. Bake for 15 minutes, or until done.



Beef Stroganoff Soup
1/4 C. butter

1 lb. tenderloin tips cubed

2 cloves garlic minced

12 oz. mushrooms sliced

1 large onion diced

1 C. shredded carrots

1 pint of water

1 T. beef base

Roux made of 1/2 C. butter and 1/2 C. flour

salt and pepper

1 pint of whipping cream

1/2 C. sour cream

1/4 C. chopped chives

In a 5 qt. pot, melt the butter and add tips, garlic. Cook until meat is browned, about 5 minutes.

Add mushrooms and onions. Saute until onion is translucent.

Add carrots, water, beef base, salt and pepper. Bring to a boil and simmer for 15 minutes.

Make roux by melting butter and add flour to it. Stir until smooth and cook 2 minutes. Gradually add to soup, stirring all the time. Add whipping cream and taste to adjust seasonings. Remove from heat and add sour cream.

Ladle soup into bowls and top with chives

BBQ SOUTHWESTERN CHICKEN

4 leg quarters (skinless)
1 cup bbq sauce (any flavor)(honey smoke perferred)
1.5 tsp of southwestern seasoning
1 tsp salt and pepper
1 tsp chicken fajita seasoning

Skin 4 leg quarters Set oven to 400 degrees Marinate leg quarters in all ingredients for 15 minutes.
Take a cookie sheet or flat sheet and a sheet of foil, and wrap leg quarters in foil, make sure no opening, seal it up tight.

Cook for 45 minutes. When done spoon remaining sauce over chicken till glaze appears, then serve.

Grilled Vegetables
I use summer squash, onions,potatoes,bell peppers,mushrooms or just any fresh vegetables that you like .cut into large pieces,season with garlic powder,salt and pepper. put into foil packet pour on Kraft fat-free Italian dressing, may add a little butter if you like wrap tightly and throw on the grill till veggies are tender, but be sure not to overcook , you don't want soggy vegetables. Also good ,add link sausage cut into bite size pieces with vegetables, then you have a whole meal in one packet.
