Cider vinegar is NOT a sub. for rice wine vinegar.

Just taste each - rice w. v. is soft and lite acid with a sweetness.
Cider vinegar - is very pungent, edges on the harsh side, great
for alot of dishes - NOT a sub.for rice wine vinegar.

White (regular) vinegar would be closer with some sugar added.

Check it out, you'll be surprised.

Listen to everyone except Fredrick A. Sugar is never a substitute for acid. That is why I won't eat papa john's pizza. I once heard him bragging that he replaced the acid in the tomato sauce with sugar and got america hooked on his pizza. I always avoid sugar in cooking as much as possible. Use it for dessert.
