I need a good recipe that will taste rich, chocalatey and gooey, but not doughy.

Neiman Marcus chocolate chip cookies

1/2 cup (1 stick) butter, softened
1 cup light brown sugar
3 tablespoons granulated sugar
1 large egg
2 teaspoons vanilla extract
1-3/4 cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1-1/2 teaspoons instant espresso coffee powder
1-1/2 cups semi-sweet chocolate chips


Directions

1. Preheat oven to 300 degrees. Cream the butter with the sugars using an electric mixer on medium speed until fluffy (approximately 30 seconds)

2. Beat in the egg and the vanilla extract for another 30 seconds.

3. In a mixing bowl, sift together the dry ingredients and beat into the butter mixture at low speed for about 15 seconds. Stir in the espresso coffee powder and chocolate chips.

4. Using a 1 ounce scoop or a 2 tablespoon measure, drop cookie dough onto a greased cookie sheet about 3 inches apart. Gently press down on the dough with the back of a spoon to spread out into a 2 inch circle. Bake for about 20 minutes or until nicely browned around the edges. Bake a little longer for a crispier cookie.

Yield: 2 dozen cookies

I really like the recipe for the Neiman Marcus chocolate chip cookies someone else supplied because the coffee flavor really accents the chocolate chips. However, I like the cookie from this recipe even more, so I just add instant coffee to this recipe as well. Sometimes when I'm feeling creative I use chocolate chunks (as opposed to the chips), white chocolate chips, and walnuts instead of the chocolate chips (yes, all three, and I suppose it measures more than 2 cups all together).
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
2 cups semisweet chocolate chips

Absolutely Sinful Chocolate Chocolate Chip
A wonderful soft cookie that is incredibly chocolaty.


INGREDIENTS:

* 2 1/2 (1 ounce) squares unsweetened chocolate
* 1/2 cup butter
* 2 cups all-purpose flour
* 1/2 teaspoon baking soda
* 1 teaspoon baking powder
* 1/4 teaspoon salt
* 1 1/4 cups white sugar
* 2 eggs
* 1 teaspoon vanilla extract
* 2/3 cup sour cream
* 2 cups semisweet chocolate chips

DIRECTIONS:

1. Preheat oven to 375 degrees F (190 degrees C). In the microwave or over a double boiler, melt unsweetened chocolate and butter together, stirring occasionally until smooth. Sift together flour, baking soda, baking powder, and salt; set aside.
2. In a medium bowl, beat sugar, eggs, and vanilla until light. Mix in the chocolate mixture until well blended. Stir in the sifted ingredients alternately with sour cream, then mix in chocolate chips. Drop by rounded tablespoonfuls onto ungreased cookie sheets.
3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. Store in an airtight container.

CHOCOLATE CHIP COOKIES
2 ¼ cups flour
1 tsp baking soda
1 tsp salt


1 cup (2sticks) butter(softened)
¾ cup granulated sugar
¾ cup packed brown sugar
1 tsp vanilla extract
2 large eggs
2 cups chocolate morsels
1 cup chopped nuts

preheat over 375*
Combine flour, baking soda and salt in a small bowl.
Beat butter, granulated sugar, brown sugar and vanilla extract in a large bowl until creamy.
Add eggs, one at a time beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon unto ungreased baking sheets.
Bake for 9 11 minutes or until golden brown. Cool on baking sheets for 2 minutes, remove to wire racks to cool completely.

This is the best recipe i have used for Choc Chip cookies....Also when adding nuts, ( i use walnuts) ROAST THEM IN THE OVEN FIRST! Makes all the difference. They are delicious.

1 package (12 ounces), semisweet chocolate morsels, or about 2 cups
1 cup chopped pecans or walnuts
PREPARATION:
Combine flour, baking soda, and salt; stir and set aside. In a large mixing bowl cream butter with sugars until light and fluffy. Beat in egg and vanilla until well blended and light. Stir in flour mixture with a spoon; stir in chocolate chips and chopped nuts.

Shape cookie dough into 1-inch balls. Place about 2 inches apart on lightly greased baking sheets. BAke at 350° for about 15 minutes, or until flat and browned. Cool completelly on the baking sheets. Store in airtight containers. Makes about 4 dozen chocolate chip cookies.

BAKE in preheated 375-degree [Fahrenheit] oven for 9 to 11 minutes or until golden brown. Let stand for 2 minutes; remove to wire racks to cool completely.

PAN COOKIE VARIATION: PREPARE dough as above. Spread into greased 15"x10" jelly-roll pan. Bake in preheated 375-degree [Fahrenheit] oven for 20 to 25 minutes or until golden brown. Cool in pan on wire rack.

FOR HIGH ALTITUDE BAKING (>5,200 feet): INCREASE flour to 2 1/2 cups; add 2 teaspoonfuls water with flour; reduce both granulated sugar and brown sugar to 2/3 cup each. Bake at 375 degrees Fahrenheit, drop cookies for 8 to 10 minutes and pan cookies for 17 to 19 minutes.

use the Nestle Tollhouse one. Make sure you are precise with the measurements and you'll be fine. I won this cooking contest once just by using that recipe! Key=precision!
