I'm not sure how much sauce these recipes will make...but here you go...
Fresh Tomato Sauce:
1 1/2 pounds ripe plum or heirloom tomatoes, cored, seeded, and roughly chopped
1 1/2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 tablespoon chopped fresh basil leaves
1/2 teaspoon chopped garlic
1/2 teaspoon salt
In a blender, combine all the ingredients and pulse to a chunky consistency.
Transfer to a glass bowl and adjust the seasoning to taste. Let sit at room temperature for 30 minutes to 1 hour to allow the flavors to blend. Serve at room temperature.

Tomato Sauce:
1 tablespoon olive oil
1/3 cup chopped yellow onions
2 tablespoons finely chopped carrots
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon minced garlic
1 1/2 cups peeled, seeded, and chopped tomatoes
2 tablespoons chopped fresh basil leaves
1 tablespoon chopped fresh oregano leaves
Pinch cayenne
1/2 cup chicken stock
Heat the oil in a large saucepan over high heat. Add the onions, carrots, salt, and black pepper and cook, stirring, until the onions are soft, about 2 minutes. Add the garlic and cook, stirring, for 30 seconds. Add tomatoes, basil, oregano, and cayenne, and cook for 1 minute. Add the stock and bring to a boil. Reduce the heat and simmer, stirring occasionally, until thickened and fragrant, about 15 minutes. Remove from the heat and puree in a food processor or blender. Serve immediately over the Stuffed Zucchini Pancakes, or store, refrigerated, in an airtight container for up to 2 days. Reheat in a saucepan over low heat.
Yield: about 1 1/2 cups

Linguine with Fresh Tomato Sauce
For tomato sauce:
2 cups seeded, and coarsely chopped tomato
1/2 cup extra virgin olive oil
1 cup firmly packed fresh basil leaves, minced
1 cup firmly packed fresh parsley leaves, minced
3 tablespoons freshly grated Parmesan
3 garlic cloves, or to taste, minced
2 teaspoons salt
1 pound linguine
Fresh parsley to garnish
Make tomato sauce:
In a bowl combine well all the sauce ingredients and let the sauce stand at room temperature, covered, for at least 1 hour.
In large pot, bring 5 quarts of salted water to a boil. Add linguine and stir to prevent sticking. Return water to boil and cook until pasta is firm but cooked, approximately 7 to 10 minutes, stirring occasionally. Drain pasta well. Serve with tomato sauce, and garnish with fresh parsley.

Salsa di pomodori
Makes about one and a half cup
2 tablespoons of olive oil
1/2 cup finely chopped onions
2 cups Italian plum or whole-pack tomatoes, coarsely chopped but not drained
3 tablespoons tomato paste
1 tablespoon finely cut fresh basil or 1 teaspoon dried basil
1 teaspoon sugar
1/2 teaspoon salt
Freshly ground pepper
Using a 2 to 3 quart enameled or stainless steel saucepan, heat the olive oil until a light haze forms over it. Add the onions and cook them over moderate heat for 7 to 8 minutes, or until they are soft but not browned. Add the tomatoes, tomato paste, basil, sugar, salt and a few grinding of pepper. Reduce the heat to very low and simmer, with the pan partially covered, for about 40 minutes. Stir occasionally.
Press the sauce through a fine sieve (or a food mill) into a bowl or pan. Taste for seasoning and serve hot.

Your options are endless - begin with 3-4 hearty tomatoes and run them through a food grinder. Add onion, garlic, basil, oregano, sugar, worchestershire, and olive oil to personal taste. For two people 1/2 a red onion, two tsp. garlic, 1/2 tsp basil, oregano, and worchestershire should be good. Use the olive oil to simmer the onion and herbs before adding the rest of the ingredients then let it cook down to your liking. To this foundation you can add nearly anything ranging from squash and tofu for vegans to meat or sausage.
BTW spagetti sauce is an old Italian love potion (smile)

it doesnt matter.
just saute some garlic in a little olive oil,,,then add ur crushed(with blender or food processor) tomatoes and simmer for 20 min. u will also need to add some basil, parsley during the last 4 min of cooking time. For a pizza sauce,,add oreagano. (And if u dont want to use garlic, u can also use onions)

You can use the recipe you have just substitute the canned tomatoes for the fresh ones......just cut them up into small pieces and cook them a little longer. I do that all the time and the family loves it
