A Fish that breeds in very cold ( even snow fed) flowing water, and is carnivorous is the best. Like trouts.
But then taste obviously depends on where you are and what you eat. People near the river tends to have a preference on river fish with bones, whereas people near the sea prefer the sea fish.
The sea fish can taste over salty to some, the river fish can be very bony to some.

Fresh diver caught scallops from Poole bay near to where I live.
Only about 50p each and 6 make a fine light lunch.
You need:
2 rashers of bacon diced small and grilled until crisp.
A slice of black pudding diced and cooked.
A few slices of very thin small chorizo, grilled well.
A nice roquette and red chard salad with a few fresh herbs.
Your scallops pans seared in a very hot pan for about 90 seconds each side.
Salad base, meats scattered over the top,add scallops and dress the whole meal with fresh lemon or lime juice.
Beautiful and simple to do.

Cod, it is firm, not a lot of bones and available in most fishmongers, monkfish is superb but a bit pricey so only rarely will I buy it.
