when you shovel the ice cream in your mouth, you are most likely doing it with the spoon in the "normal" position. meaning that you hold the spoon upright and allow the ice cream to hit the roof of your mouth where the intense cold gets transferred from there.
to avoid "brain freeze" when eating ice cream, turn the spoon over and let the ice cream hit your tongue first, then swirl around. your tongue it naturally warm anyways so it'll dissipate the cold, to reduce or even eliminate brain freeze. try it!

The roof of your mouth becomes too cold creating a brain response of headache. Try rubbing your tongue fast and hard and closely over and over the roof of your mouth when you get a brain freeze-it will go away quick by warming up that area.
