I am trying to make a bread pudding as my mother used to make with stale bread. Have so far only been able to find recipes for bread and butter pudding. Which I know how to do.

This is an extremely old recipe handed down from my forebears in the Forest of Dean. I'm afraid measurements are very vague, but then I couldn't stick to them anyway - I'm that type of cook! But use your discretion and it will turn out fine!

Soak bread (without crusts) in milk and beaten egg until the liquid has been absorbed and resembles a thick broth.

Add mixed spice, mixed fruit, chopped cherries and walnuts.

Spread into a greased tray and bake slowly until a knife comes out clean.

Remove from oven and sprinkle with sugar.

Wait for it to cool if you can, and cut into squares.

EAT!!!

This is so easy and I do hope you try it.

Olde Fashioned Spicey Bread Pudding

Sometimes this gets confused with bread-and-butter pudding, but it's quite different. It was invented, to use up stale bread, which is still a good reason for making it – however, it has developed into something so wonderful, it's worth letting the bread go stale on purpose.


Serves 6

Ingredients
For the bread pudding:

8 oz (225 g) white or brown bread, crusts removed
2 teaspoons mixed spice
whole nutmeg
4 oz (110 g) sultanas
1 oz (25 g) currants
1 oz (25 g) raisins
2 oz (50 g) whole candied lemon or orange peel, chopped
apple juice/ orange juice
10 fl oz (275 ml) milk
2 oz (50 g) butter, melted, plus a little extra for greasing
3 oz (75 g) dark soft brown sugar
1 large egg, beaten
grated zest ½ orange
grated zest 1 lemon
1 tablespoon demerara sugar


5 fl oz (150 ml) double cream
1 oz (25 g) golden caster sugar


You will also need a baking dish with a base measurement of 6¼ x 8 inches (15.5 x 20 cm), 1¾ inches (4.5 cm) deep, buttered.


Begin by placing the sultanas, currants, raisins and candied peel in a bowl. Pour over some liquid such as apple juice or orange juice and leave aside to marinate. Then, in a large bowl, break the bread into ½ inch (1 cm) pieces. Add the milk, then give the mixture a good stir and leave it for about 30 minutes so the bread becomes well soaked. Pre-heat the oven to gas mark 4, 350°F (180°C).

Next, mix the melted butter, sugar, mixed spice and beaten egg together and then add to the second bowl. Now, using a fork, beat the mixture well, making sure there are no lumps, then stir in the marinated fruits, with any juice remaining, and also the orange and lemon zest.

After that, spread the mixture in the baking dish and sprinkle the sugar over it, along with some freshly grated nutmeg. Bake on the centre shelf of the oven for about 1¼ hours. Meanwhile, whisk together the ingredients for the cream and serve it with the pudding warm from the oven.

Can also be eaten cold and is just as yummy. Enjoy.

There is a standard old fashioned bread pudding recipe at the site I've attached. However, for ,many years now my favorite brad pudding recipe has been for chocolate bread pudding. If you like chocolate, and like bread pudding, try this recipe. There is nothing like it!!

2 1/2 cups cut up stale bread
1 tsp. vanilla
2 eggs
2 1/2 tbsp. cocoa
2 cups milk
1/4 cup sugar
1/2 cup chocolate chips
salt

Preheat oven to 350 degrees. Place bread in a round, buttered, deep-dish pie plate or casserole dish. In a medium bowl, whisk together eggs, milk, sugar, a pinch of salt, vanilla, and cocoa. Add chocolate chips.

Pour over bread and gently mix. Let sit for 15 minutes, so bread can absorb mixture. Bake for 30–40 minutes until firm but not dry.

The original recipe calls for cinnamon, but I have never added the cinnamon. We serve this warm with thick cream and it is so delicious!

Bread Pudding
Use stale bread - homemade bread is best. If you use Raisin Bread you can eliminate the extra raisins. You can serve it with cream but it's really good with a vanilla or rum flavoured sauce, or a fruit sauce.

Ingredients:
3 eggs, beaten
3/4 cup white sugar
1 teaspoon vanilla
1/4 teaspoon salt
3 1/2 cups milk
Enough bread cubes to thicken
1 cup raisins
Cinnamon



Directions:
Mix eggs, sugar, vanilla, salt and milk together. Pour into a large buttered baking dish.


Add enough bread cubes to thicken (about 4 cups).


Stir in raisins. Sprinkle top with cinnamon.


Bake at 325 degrees F. for 45 to 50 minutes, until the pudding is puffed up and brown, and a knife inserted in the centre comes out clean. Serve warm.

OLD - FASHIONED BREAD PUDDING .
Place 3 cups soft bread crumbs (or torn bread) in 1 1/2-quart baking dish (use 4 cups for firmer pudding). Blend in: 1/2 c. sugar 2 eggs, slightly beaten 1/4 tsp. salt 1 tsp. cinnamon or nutmeg 1/2 c. seedless raisins

Place baking dish in pan of hot water 1-inch deep. Bake at 350 degrees for 40- 45 minutes, until silver knife inserted 1-inch from edge comes out clean. Serve warm with or without hard sauce or cream. Yield: 6 servings.


CHOCOLATE BREAD PUDDING:
use 1/2 cup semi-sweet chocolate pieces instead of raisins. Omit the spices.

BUTTERSCOTCH BREAD PUDDING:
use BROWN sugar instead of granulated sugar.

DATE-AND-NUT BREAD PUDDING:
use 1/2 cup chopped dates and 1/4 cup broken nuts instead of raisins.

HARD SAUCE:
8 tbsp. (1 stick) unsalted butter, softened
1 c. confectioners' sugar
3 tbsp. dark rum
In medium size bowl, using mixer set at medium high speed, beat butter with sugar for 2 minutes or until mixture is light and fluffy. Stir in rum.

2 slightly beaten eggs
2 1/4 cups milk
1 tsp vanilla
1/2 tsp groung cinnamon
1/4 tsp salt
2 cups 1-inch day old bread cubes
1/2 cup brown sugar
optional 1/2 cup raisins
combine eggs, milk, vanilla, cinnamon, and sald: stir in bread cubes. stir in brown sugar and raisins. pouir mixture into 8x1 3/4 in round ovenware cake dish
place pan in larger shallow pan on oven rack
poor hot water into larger pan 1 in. ddep
back at 350 about 45 min. or until knife inserted halfway between center and edge comes out clean

This recipie is particularly fab - hot or cold! i always sprinkle cinnamon and demerera sugar on top too - divine!
