Most athetist have not studied the many religions of the world, including Christianity. It is impossible to lump them all together with a "yes" or "no" answer because, as demonstrated by other comments on this question, some people have done their homework.
As far as who Jesus Christ was, the only real way to understand that is via the New Testament and perhaps Wikipedia. Most scholars agree that he did exist in some way around 0 AD because of documentations regarding him and his disciples. Many disciples were crucified or executed some other way for their belief in Jesus, and no one disputes this fact. Why would these people die for someone who never existed? And by extention, why would they die believing in him, refusing to forsake him and being executed because of it, if they had really created the whole thing as a sort of hoax. People don't die for hoaxes.

I think they understand what they reject. I am not completely sure though, since I am a Christian and have never been atheist. Although I cannot imagine that from all of the posting on this website concerning God, Jesus and salvation that they do not know what they reject.
Who IS Jesus Christ? Jesus Christ is the Son of God who died on the cross to pay for our sins so that we don't have to pay for them in hell. It is up to us on whether or not we accept his payment.
for IndyT... I am always talking to people about salvation. If they tell me they don't believe it, don't care, don't want to hear it. I let it go. I simply tell thank them for their time, wish them a good evening and go about my way. It is only my responsibility to present the Gospel to them. It is not my responsibility to make them accept it.

Yes. Christians seem to have a hard time accepting that atheists actually know about christianity and choose not to accept it.
Atheists usually know more about other religions than religious people and have often read the holy books of several religions which may be part of the reason that they don't believe any of them.

Completely. It's the NON-atheists that refuse to accept the answer.
"Believers" are very pesky that way. You tell them you don't believe and don't want to hear it and they want to insist that you have to hear it anyway. When you retaliate then you are "persecuting" them and "mocking our beliefs" and absolutely refuse to see that they brought it on themselves.
