Use some canned tuna fish (from the health food store is the best). Put the tunafish into a bowl and mix in some Safflower Mayonaise (however much you like). Then mix in a small handful of chopped walnuts and a few red grapes cut into halves. Mix this up well and salt to taste. Then put on a peice of high quality bread that you have toasted -- put a few peices of raw spinach on top.

It is delicious, easy and good for you! I eat this for lunch quite often.

there are lots of things, trust me i know,i work behind a desk and there is only a microwave and a toaster here, but i have some ideas for you.
1. grilled cheese and tomato soup.
for the grilled cheese you can toast your bread and then add butter, melt the cheese in the microwave. if you don't have a microwave you can grill your sandwich with a clothes iron, (it really works!) then for your tomato soup, just heat in mircowave, or if no microwave, use the hot water from your coffee maker
2. salads
just buy lettuce and all that you like in them, or buy the pre-mixed stuff
3. bagel pizzas
toast the bagel, open a can of pizza sauce, and put it on the bagel with peperoni, cheese, or whatever you like on pizza
4. ramen noodles
put them in the microwave, or use the water from the coffee maker.
for added nutrition you could drop an egg in there while it is cooking. you could also add some sausage or cheese, very yummie! oh, the best noodle flavor with this is chicken
5. mashed potatoes and gravy.
make the instant mashed potatoes with a microwave or hot water from coffee maker, buy a can of gravy and there you go.

if you like these so far, i've got a lot more, just e-mail me and i'll send you a lot more. good eating! :-)

If you don't have a microwave, get one - then you will have at your fingertips all kinds of good, nutritious and easy microwave meals. Lean Cuisine, Healthy Choice, South Beach Diet, and Weight Watchers all have good-tasting frozen foods; the new paninis come out GREAT and toasty. Microwave popcorn is a good and healthy snack, full of fiber so it fills you up more than chips. Cereal is good at any time of day; also try my favorite breakfast: smoked salmon (not as expensive as you think), a toasted English muffin with light cream cheese and chives, and a fresh sliced tomato. Crock pots are also great for dorms; there are frozen ready-made crock pot meals in the freezer. (They're kind of high in fat so watch the labels.) You just put them in your crock pot, go to your classes, and when you come home dinner is already done! Also try some of the ready-cooked (grilled) chicken strips; they are low in fat and quite tasty. Microwave a tortilla, put some cheese or sour cream on it (light of course), some onions and peppers, and the chicken strips for a fajita. I hate recipes; as a student you are too busy to cook! Get the microwave and discover all the great easy things in your grocery's freezer section!

I lived in a dorm my first year and I know totally what you're talking about.

A good thing to do is get one of those roasted chickens they sell in the supermarket for $6.99 and stick it in the fridge. And some cold cuts.
Other then this get: romaine lettuce, green pepper, tomatoes, onion, cheddar slices, various fruits, salad dressing, salsa, bagels, tuna, tortilla wraps, buns or baguettes, whole wheat bread and condiments. (also I used to sneak stuff like hard boiled eggs, oranges and apples from the meal hall...but we had a compulsory meal plan that I didnt want to waste).

Anyways with this you can make:
-toast with jam/peanut butter/cinnamon sugar/etc.
-Various wraps(with the chicken/coldcuts/tuna and salsa,lettuce, tomato, onion,etc.)
-sandwiches(egg, chicken, tuna, vegetable)
-chicken caesar salad
-just plain chicken and a couple of cherry tomatoes is yummy too.
The trick is to mix it up with the condiments...maybe honey-mustard one day and mayo&hot sauce the next kinda thing.

Breakfast is probably easy at the meal hall. Does yours have a cereal bar? And a fruit and yoghurt buffet? If it does, that makes a decent enough breakfast.

I'd also REALLY recommend investing in a small hotpot. You can find some for less then 20 dollars. If you have a bit more money kicking around(pr maybe a christmas gift?), get a small microwave (50-70 dollars). With either of these and the toaster you can make:

-Scrambled eggs on toast/bagel. (chop up some green pepper, onion and tomato and throw them in the eggs)
-oatmeal(you can just boil water for the instant kind or you can actually cook oatmeal)
-Various soups. Canned or from scratch. If you want to make tomato extra yummy, add some finely chopped onions. And mushroom soup tastes amazing with a bit of chopped garlic, half a cheese slice and a bit of chicken stock thrown in.
-rice and stove-top dressing (mmmmmmmm).

Now IF you get a little hotpot I'm gonna share one of my favourite made-in-my-room meals. Toss roughly chopped onion and tomatoes along with a bit of butter/olive oil/whatever into the hotpot and sautee it on high. toss in some salt and pepper to taste. If you like, its really really yummy with like 1-2 tsp of plum sauce added in. Now this only needs to be cooked for a short while. You want the onions cooked but still crisp. Serve over a bit of rice.

Just make sure you have lots of fruits and vegetables. And protien. And if you really want to keep it healthy, the best thing to do is just to not have anything 'bad' around. If its not there you wont eat it.

This is about as easy but nutricious as it gets. There's loads more you can do of course if you have the time...there were some other great ideas posted :).
Good luck! Enjoy.

You didn;t say you had a microwave (but you really should), but if you do, here's an extremely easy recipe that's made entirely in the microwave. It was featured on a recent episode of George Duran's Ham on the Street. I have made it several times and it is very tasty!

MICROWAVE CHICKEN CURRY

2 tablespoons Indian curry paste
3 tablespoons olive oil
4 boneless, skinless chicken breasts, cut into strips
1/2 bunch basil, leaves chopped
1/2 bunch cilantro, leaves chopped
2 (13.5-ounce) cans coconut milk
2 tablespoons soy sauce
Kosher salt
Freshly ground black pepper
Steamed rice, to serve
Paprika, for garnish
1 scallion, thinly sliced, for garnish

In a large microwave safe pot with a lid, mix together the curry paste and oil. Microwave on high for 3 minutes. Add the chicken to the pot and stir. Cover with the lid and microwave on medium for 8 minutes.
Add the basil, cilantro, coconut milk, and soy sauce and season with salt and pepper. Give it a good stir, cover it, and microwave on medium for 4 minutes. Stir it again, cover, and let it rest for 3 or 4 minutes. Serve over steamed rice, garnished with paprika and scallions.
