Roast chicken - Clean your bird, then sprinkle inside and out with salt, pepper, thyme and paprika (just a little paprika). Roast @ 350 about an hour & 15 min. if unstuffed, 2 hrs or more if stuffed. Serve with bisquits & corn on the cob. Very easy and homey.
Sage stuffing - You can cook this in a pan outside of the bird to save time.
1/4 lb pork sausage
1/2 loaf bread, torn up (stale is fine, you can use it up)
1/2 lb. sliced mushrooms
1/2 c. sliced celery
1 small onion, diced
salt, pepper to taste
1 t. thyme
2 t. sage
1 can chicken broth, you ill use about 1/2 use the other half to baste the bird and make gravy.
Combine all but broth in a large bowl, then add just enough broth to moisten all the bread. Pack into an 8x8 baking dish and pour just a little more broth over so it stays moist while cooking. Put in oven when chicken has about 45 min. to go.

Creamy Chicken Asparagus Casserole
Ingredients:
1 box wild rice, prepared according to directions
1 10.75 oz can cream of celery soup 1 10.75 oz can cream of mushroom
1 cup miracle whip
2 eggs, beaten
1/2 cup milk
1 tbsp fresh lemon juice
2-3 cups diced cooked chicken
1 lb fresh asparagus, cut into 2 inch pieces
1 cups shredded asiago or parmesan cheese 1 cup cheddar cheese
2 cup crushed croutons or bread crumbs
2 tbsp melted butter
Directions:
Grease a 9x13 baking dish.
Spread wild rice on the bottom of the dish. In a large bowl, whisk together soup, mayo, egg, lemon juice and milk. Top the rice with the chicken and asparagus and 1 cup of cheese. Spread soup mixture on top. Then top with remaining cheese and then crushed croutons. Finally, spoon melted butter over croutons. Bake at 350 degrees for 45 minutes to an hour.
For dessert:
BEST DARN CHOCOLATE CAKE
1 box plain devil's food cake mix (18.25 ounces)
1 box instant chocolate pudding mix (3.9 ounces)
1 cup sour cream
1/2 cup water
1/2 cup vegetable oil
4 large eggs
1. Preheat oven to 350 degrees F.
2. Grease cake pan.

10. Pour batter into prepared pan and smooth it out.
11. Bake for 27-32 minutes

Chocolate Lover's Favorite Cake
1 (18.25 ounce) package devil's food cake mix
1 (3.9 ounce) package instant chocolate pudding mix
2 cups sour cream
1 cup melted butter
5 eggs
1 teaspoon almond extract
2 cups semisweet chocolate chips
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease a 10 inch Bundt pan. In a large bowl, stir together cake mix and pudding mix. Make a well in the center and pour in sour cream, melted butter, eggs and almond extract. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Blend in chocolate chips. Pour batter into prepared pan. Bake in preheated oven for 50 to 55 minutes. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

Here's the best comfort food dish EVER!
Chicken Stuffed Shells
1 pkg large shells, cooked according to package directions.
1 lb. + of chicken breasts, cooked and cubed apx. 1/2 in d.
1 lb. cheddar jack cheese, shredded
2 cans campbells cream of chicken soup
2 cans/jars chicken gravy
1 box Stouffers chicken stuffing, cooked according to package directions.
Mix chicken, stuffing, 3/4 lb. cheese and 2 cans soup (straight out of the can..not mixed and cooked) in a large bowl. Stuff cooked shells with the mixture. Pour a small amount of gravy in the bottom of a 13x9 pan, put shells in, pour remaining gravy on top, sprinkle remaining cheese on top. Bake at 400 apx. 20 min, or until hot and cheese is melted. Wa la. Feeds about 6 people or your lunch at work all week :)

As far as your home, low light (candle light, some that smell nice, Yankee candles are great). Have the table set and ready. Buy some massage oil. It is romantic and intimate but if your husband has a long trip he may be exhausted and the massage oil will relax him but be nice for you if he isn't up to anything else.

Serve ribs, mashed potatoes and a favorite vegetable, have a nice loaf of bread or rolls.....apple crisp for dessert.
OVEN-BARBECUED SPARE RIBS:
3 to 4 lbs. Ribs (country-style)
black pepper (season to taste)
garlic powder (season to taste)
1 lemon (sliced)
1 large onion (sliced)
1 cup ketchup
1/3 cup Worcestershire Sauce
1 teaspoon chili powder
1 teaspoon salt
2 dashes Tabasco Sauce
2 cups water
Place ribs in a large shallow roasting pan, meaty side up. (mine measures 14 x 10 1/2) Season meat with pepper and garlic powder. On each piece place a slice of unpeeled lemon, a slice of onion. Roast in a very hot oven (450 degrees) for 30 minutes. Drain grease from meat pan. Combine remaining ingredients in saucepan and bring to a boil and pour over ribs. Continue baking in moderate oven
(350 degrees) until tender, about 45 minutes to an hour. Baste ribs with sauce every 15 minutes. If sauce gets thick, add more water.
APPLE CRISP:
4 cups apples, peeled and sliced
2 Tablespoons lemon juice
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 cup water
1 cup granulated sugar
3/4 cup flour
1/2 cup oatmeal
1/3 cup butter
Wash, peel, core and slice apples, toss apple slices in a bowl with lemon juice to prevent darkening. Arrange apple slices in a buttered baking dish. In a bowl, combine cinnamon, salt and water. Sprinkle mixture over apple slices. In another bowl combine sugar, flour and oatmeal. Cut butter into dry ingredients. Spread crumb mixture over apple slices. Bake at 350 degrees for 40 minutes, or until apples are tender and topping is lightly browned. Serve warm.

Crock Pot Enchiladas
Serves 6
1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Chopped Green Chilies
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup
Instructions:
Brown hamburger and chopped onion and pour off grease.
Put all ingredients in crock pot. Mix and cook low 4-6 hours.

Chicken Parmesan
Serves 6
1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless

1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped
Instructions:
Preheat the oven to 350ºF
In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.
Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

Chicken Pasta Alfredo
Serves 6
6 Qts Water
12 oz Fettuccine Pasta
2 Tbsp Peanut Oil
6 (4 oz) Chicken Breast, boneless, skinless
2 (10-3/4 oz can) Cream of Mushroom Soup
1 (20 oz bag) Frozen Broccoli Florets
3/4 Cup Parmesan Cheese, grated
Instructions:
Heat a large pot of water, over high heat. When water comes to a boil add the pasta and boil for 8-10 minutes. Drain; reserving 2 cups pasta water. Cut the chicken into strips (1/4''x1''); set aside.
In a large frying pan, over medium-high heat, add the oil and chicken pieces stirring frequently until golden brown.
In a medium saucepan, over medium heat, add the chicken pieces, sauce, 1/4 cup reserved pasta water, stirring frequently. Add the remaining pasta water into the saucepan and bring just to a boil, then add the broccoli. Cook for 1-2 minutes. Remove from heat.
Divide the cooked pasta evenly between serving dishes and top with chicken and broccoli mixture.

Spanish Meatloaf
Serves 6
1-1/2 lb Ground Beef, lean
1 (5.5 oz envelope) Wyler's ''Hearty Beef Stew'' Soup Starter
1 (8 oz bag) Mexican Style Cheddar Cheese, shredded
1 (4 oz can) Diced Green Chili Peppers
1 (14-1/2 oz can) Diced Tomatoes, drained
1 Cup BBQ Sauce (recommended: Kraft Carb Well)
Instructions:
Preheat the oven to 350ºF
In a large bowl add the soup starter, diced green chili peppers, and the diced tomatoes; mix until the liquid is absorbed. Add the ground beef and BBQ sauce and mix thoroughly until well combined.
Place 1/2 of the mixture in a loaf pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal.
Bake for 45 minutes; drain any residual fat if necessary.
Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.

1/2 Tsp Salt
1/2 Tsp Basil
1/2 Cup Heart Healthy Bisquick
1 Cup 1% Milk ''Skim''
1/2 Cup Eggbeaters
3 SecondsNonstick Cooking Spray
Instructions:
Preheat the oven to 350ºF
Mix the crab delights, shredded cheese, cream cheese, onions, salt, and basil in a medium bowl.
Coat a 9-inch pie plate with nonstick cooking spray and spread the crab mixture into the bottom.
Beat the remaining ingredients until smooth. Pour over the crab mixture and bake for about 40-45 minutes.
Serve immediately.

Strawberry Shake

1 Cup Frozen Strawberries, thawed
2 Tbsp Honey

Instructions:
Puree the strawberries and honey in a blender or food processor. Add milk, sweetener and yogurt; blend until smooth.
Pour into glasses; garnish each with a whole strawberry
